sounds really interesting. I don't think I've ever had anything like it.

The Aramis in NB's beer was similar to Amarillo. It was one of the better commercial IPAs I've had. Saaz was a perfect companion to it.sounds really interesting. I don't think I've ever had anything like it.

amarillo with saaz - that sounds pretty wild.
maybe I should try some motueka (spelling?) with amarillo sometime. that is assuming I don't use most of my motueka for that saison I have planned.

Will do! The recipe is solid with Spalt Select in place of the Aramis. First time I brewed it was spot on. I have no reason to tweak the recipe except to experiment. Hope the Aramis comes across like it did in NB's beer.

Also upeed the Vienna to 6lbs and dropped 1 lb of floor malt. Get to put this in my new translucent 8gal bucket.

This one's in the chamber, 1gal drauflassen volume spinning on the plate, 5.7 gals chilling for the pitch tomorrow. 10.5ozs of hops in 7gals of lager made one hell of a wad of debris. I strained this one and am glad I did. It would have caused me to lose at least 1.5gals if left in the primary overnight and racked the next day like I usually do.
Wort was a beautiful burnished gold, nicely floral and spicy. Hope it turns out as good as the batch I used Spalt Sel in. Love the overnight mashout. Makes for a short brewday.
