What is this on my beer?

So there is really no real way to save this bucket. I have it soaking in a 2/3 water 1/3 bleach solution right now. Ill keep it soaking overnight. I dont think anything could live in it after this.

5% bleach for 20 minutes (direct contact) will kill just about anything. The only two problems are getting direct contact everywhere (like around the gasket and into cracks, like already mentioned) and then getting the bleach out completely before you make beer in it.

I am making it a habit of storing star san in my fermentation buckets now, circulating it every now and then, so I tend to think that should help in the long run.

That's what I do, but watch out for minute colonies of mold growing inside the lid, where condensate can form and the rare surviving spore can bloom. I've seen this happen a couple times.

i wonder if steam would have more penetration in to these invisibly small cracks rendering the bucket sterile? would this cause damage to food grade ness? Me I would buy a new one.

Oh definitely. I know exactly what you are talking about. I do watch the lid, and when I see something growing there, I spray it with star san (I keep star san in a spray bottle).

add equal parts of vinegar and bleach to the water.NOTE add bleach first then vinegar.dont mix 100% vinegar with 100% bleach.Edit soak the bucket with oxy clean,rinse then add the BV mixture

Glad its tasting good. No need to wait till 38 you can start carbing now.Btw, never heard from you how you liked my Rye IPA and other?

Dude Im so sorry, I forgot all about that. I ended up taking all the beer you sent me over to a friends house for a taste testing. We loved the Rye IPA along with all the others. We ended up getting so drunk that weekend and it was so long ago I cant remember what was what anymore. I can tell you this. I enjoyed the beer you make better then the store bought one you sent.Dan

Ive been looking back to what may have caused this and here is what I came up with.New bucket never used before, I cleaned and sanitized it so I dont think that was the problem. What I think caused it is this. During fermentation I had a blowout. I didn't catch it until after the foam had settled back down so I think the airlock got full of yeast foam and sat there a while going bad, when the foam settled back down it sucked that nasty yeast back into the bucket causing the infection.Besides that I cant think of anything else I did that could of caused it.Dan

Thanks I appreciate it. I didn't know if you liked belgiums or not but I knew you couldn't get that one so I sent it.Now that you have yours done and carbed how do the two compare?

Well mine didn't get the last week of dry hopping so it will be different. Yours had a different aroma and aftertaste then mine. I kinda wish I kept it to do a side by side test.Dan
