oof! I'd have to up the carafa spec III up to 12 oz from 6 oz. this is a 10 gallon batch so maybe that's not so bad but it makes me a little nervous.

I would have said about 16-17 at 7 cm, but that's from memory.

if one of you guys isn't great at estimating how much beer you were looking through you could be remembering it the same.
22 SRM at 5 cm is pretty damn close to 16-17 SRM at 7 cm.

ha! too bad. so far I'm really impressed with both of the ayinger beers I've had. I'm a little nervous about acquiring some locally (other than the german restaurant in the area) though b/c if it wasn't handled well I could be let down. these beers seem like they sit on the shelf for a long time at most bottle shops since they aren't the latest imperial/double/IPA/stout/.

Keep watching. If you see the Hefeweizen, Dunkelweizen or Weizenbock grab one as they are all delicious. Unless those styles are completely outside of your wheelhouse.

damn! I need to do a two step starter. guess I know what I should be doing tonight!
probably 1.5L followed by 3.25L to end up with about 750B cells. I was really hoping I could do this in 1 step but it would basically take a 5L starter which I can't really fit into my 5L flask
