I assume it's because you're not brewing. You don't have to tell me if you don't want to but... why are you not brewing? Other priority projects?

Time and other projects taking priority. Free time just doesn't come in large enough chunks and when it does there are plenty of larger projects that need to fill the time slot. I used to stay up late and do it after kids were in bed but making up that lost sleep is tough with current schedules so I stopped doing that.

Thanks, man. I did a yeast comparison w/ one carboy getting 34/70 and the other S-23. They're different, but very good in their own way.

Still have never used 34/70. If it's really 2124 in dry form then I'm sure I would love it because 2124 is one of my favorites. I do have it in the fridge but haven't used it. I have used S-189 recently as a decent dry lager yeast and used S-23 once in an emergency... it was okay but not a ton of character.

I once had a starter of 2124 take a while to get going so I used the dry equivalent on Brew day. Later the starter of liquid yeast looked good so I made more wort and used it. Both beers had a very similar yeast character.

Agreed. I don't take advantage of all of them but I remember many years ago walking into the local "BREW & GROW" shop (which was run mainly by pot-smoking Dorito-eaters) and asking which dry yeast they had... the girl there would always say "MUTTONS!". That's all they had. Now you have dry Belgian yeast, hefe yeast, a number of nice dry lager yeasts and a ton of dry ale yeasts. I think I have the Lallemand Diamond in my fridge too. So many yeasts.

Also agreed. Dry yeasts are my go-to anymore, unless I'm brewing something that IMO really requires a good liquid strain.

it's an easy and cheap option for sure when the dry yeast is the right tool for the job. unfortunately for dry lager yeasts the cheap aspect is a little out the window if you don't want to make a starter.

czech type lager (hops are motueka, czech saaz, hallertau). only about 2 weeks old so not entirely clear yet.

Thanks! We enjoy it. In the summer when everything is green it is nicely secluded and the kids have a ball.
