Thanks to drezz and his advice on a hop schedule, I made the first Pale Ale I’m enjoying and proud of. Pacific Jade & Mosaic.

I don't really make IPA's and the Pale Ale is an occasional but that's going to change a bit not that I have a process. Haze in these styles never bothers me. My lagers gotta be clear however

Started to put a hurtin' on this keg- made it about two months ago- Call it "Everything Went Black IBA". your typical India Black ale; boat load of Warrior, Simcoe and Apollo in the boil, and a Apollo and Jarrlyo Dry hop. big hop flavor with a kiss of roast. Fermented with WLP007, finished at 6%, and still a hop bomb.
What did you use for your dark malts? I used carafa III & dark belgian candi syrup (lost my taste for Belgians so thought I'd toss it in here.) Has a chocolate sweetness to it, which given I did only whirlpool & dry hops is almost too sweet.

Midnight Wheat is a great way to add color with out the roast or any sweetness.

Yes I do. The carafa special malts to me still had some bitterness and midnight wheat has none of that.

I tend to use the MW in ales and Carafa in lagers but I think you could interchange them. When I make a beer with Carafa, there might be a roastiness when the beer is young but once the beer is really ready to go, that character fades and blends in really nicely with the rest of the grist. I always have both available but it seems like I use more Carafa... but that's probably because I make more lagers.

are you using carafa special or carafa? I found out there is definitely a difference!

I didn't think I got much roast out of that but if midnight wheat is even less roast that's even mo better.

Even at only an ounce in my Vienna Lager, it's noticeable. I've used both MW and III in my Vienna and decided I like 1/2 ounce each.

Lefty, just curious how much dark malt was in this beer... what percentage and which grain? Sorry if it was posted... I didn't see it. Doobah was asking about the U FLEKU dark lager which has a very similar color and opaqueness to it. I think it's like a "Czech Dunkel" but my Munich Dunkels don't end up with quite that much color. It would be helpful to have a read on it. Cheers.
