Beauty. Do you have any pitch rate secrets/standards you go by when making your weissbiers? Something to get the yeast character you want. Seems like most people are going with a slight under pitch these days to get it right.

Maybe a slight underpitch and whole lotta luck.
I've been very pleased with my lodo weissbiers. Even though, they're supposed to be all about the yeast, I'm getting a much rounder flavor profile that's well balanced. Just gotta watch out for the sulfur bombs.

Ok thanks. And yeah, I have gotten a good whack of sulfur from those yeasts even without the NaMeta addition.

It looks like a stange that got into someone's stash of Viagra! It's actually too tall to fit under the taps. I can get the glass about 80-90% full and then I have to stop. It's a 16oz Trumer Pils glass and I'm really digging it.Looks great and cool glass too.

CAP. Really good, but for me, even with 10% flaked maize the corn flavor really comes through. Looks amber due to the lighting. It's bright golden.
