Oh yeah, I think pkrone posted a page from a book showing that head formation and stability can be improved by a shorter boil. Hmm, that is good stuff.

For awhile there I seemed to be under the impression that neutralizing bicarb was a factor. When I was making these dreadful pale lagers (with the harsh, husky flavor), I was failing to add acid to my sparge water and I was also sending my strike water to the MT and THEN adding acid which could have been too late. When I started acidifying the strike water first and also ensuring my sparge water had a lower pH, not only did the beers get better but I think the head on the beer improved too. An absence of bicarb, better pH control and shorter boil times. I'll have some t-shirts printed up with those three bullet points and mail them out to you guys.

That's the glass that the small Italian bar in the Austin airport was serving beers in... and they had the Live Oak Amber Lager (which is what I envisioned when I made this beer). The beer is very similar to what I envisioned and so I used the glassware they had there.

My beer in the sense that I paid for it... This was at Twin Leaf Brewery. Pretty good beers, definitely a good IPA. The beer looked perfectly set up so I had to take a pic.

This is the IPL I was talking to Morty about. 12ozs of hops in the batch. It currently has 1oz each of citra and chinook in the keg as well as 2oz of cascade.

It doesn't disappoint. Resiny and chewy mouthfeel as well as great hop flavor. I've been shooting for a crystal clear hoppy AF brew for awhile and have it figured out. Gonna use the grain bill on other stuff as well as I nailed it.
