right now I'm at 1.013. thinking I'll let it hang out around 70F for another couple of days. lot of yeast still hanging around still. the aroma is very interesting but warm and flat it's tough to tell much about it. I'm not sure I'm good at detecting diacetyl at this stage so hopefully I don't have it. it has a very slight astringency right now but there is more small particulate matter in this beer than I've typically seen so I'm guessing it's the yeast that's making it seem a little bitter/astringent. the particulate seems very suspended, almost like it's in a gel with minimal movement. I've never really witnessed something like that before.

Sounds like some yeast are still active and fermenting even if most have dropped. I'd let it hang out at 70 at least another couple of days. Then shut off your heater and watch that 002 clear.

I mostly worry when I taste astringency like that. it makes me worry that I didn't rinse that PBW out of the kettle thoroughly enough or something. I always feel like it feels slick when I use that stuff which is why I usually use oxiclean.

checked gravity again last night - looks like it's at 1.012 now. still a good amount of stuff floating in the sample so I left it at 70F for now. I'll probably turn off the space heater tonight.
the hops seem a little bit funky mixed with fruit. is that typical of galaxy?

I wouldn't say funky, maybe that is from the yeast that is still in suspension.
could be. it kind of reminded me of the essence of gym sock I get from citra.

I have not got funky form Galaxy beers, granted I have never done one that was 100% galaxy. It is a nice fruity hop though.

so the off flavors are gone. must have just been something in the yeast or that the yeast needed to clean up. very tasty beer. non-dry hopped it has good aroma. dry hopped I expect it to be fantastic. there was a lot of hop sludge in the bottom of primary that smelled very tropical fruity. more so than the actual beer. I wish it had stayed in there! hopefully the dry hop will help.
