I think I am.  I have used galaxy just never alone so I want to see how it works just by itself.

Probably about 100 ppm SO4 and close to 0 ppm Cl.

so mostly sulfate I guess.  My water is also relatively low in most things.  I have to wonder if a beer like this might benefit from a little chloride for a nice soft/full character to the malt.  maybe not.

I'd probably change that as well, based on my brewing practices and for those very reasons, but this was an excellent beer the way it was. It has quite a bit of Crystal, a warm mash temp and a malty base malt, which all probably soften it. However, knowing me, I would also be thinking of ways to "improve" it... But then I can't really do anything without trying to "fix" it.

I'd probably change that as well, based on my brewing practices and for those very reasons, but this was an excellent beer the way it was. it isn't everyday one of my beers is described as having a lot of crystal I can say that. I treated the water with just gypsum when I brewed this batch but for similar beers I tend to just add some chalk and gypsum and not worry too much.

most of the experts recommend against chalk now b/c it's not very effective at adjusting pH.  why would you add it to a mash you almost def need to acidify?

I've backed way off crystal in most things.  this is about where I like a lot of stuff now in terms of crystal.

 

I acquired the WL002 today.  I didn't know they had a new packaging system.  Is there any downside compared to the vials?

here is my version of this recipe.  GP instead of CMC pale ale.  changing the hopping a bit.  30 min boil.

is that a typical lovibond value for GP I have there?  seems kind of low...

could be when I made my spreadsheet I had simpson's or something similar.  diff is minimal in terms of the SRM and mash pH so I guess not a huge deal.

I'll be doing a 2L "shaken not stirred" starter for this one.  I'll make the starter tonight and brew tomorrow.
