No, I just go fill up at the local water store. 9 bucks for 15 gallons. A little pricey, but worth it.

Whenever I use lactic things never quite go as predicted for me. Initially the mash pH was really low (like 4.7) so I added in a little bit of baking soda and way over did it for probably 5 minutes, 10 minutes max. I'm guessing the pH was probably somewhere around 6. mash temp is 153-154F. I added some more lactic and got it back down to 5.3.
Are you sure about that? Going from 4.7 to 6 would take a ridiculous amount of baking soda.

As sure as my colorphast strips are anyway lol. I saw a color on those strips I've never seen before.

2.6 g of NaHCO3 is 0.0309 mol of HCO3–... going from pH 4.7 to pH 6 in 19 L (i.e. ~5 gal) of water requires only 0.00036 mol of HCO3–. Jason are you sure EZ water isn't in milligrams?

I don't think it's as straightforward as 1:1 dissociation.

oh never mind, that's only for "remote" devices which this would not be since it's under a foot long
has that general pH meter been determined to be the same thing yet?
