This is my idea.  I have not used this hop blend but love both of them and somehow I can just taste the outcome.  Some say 3711 is bland but I think it is so just right.  The honey malt will round out the mosaic flavor and possibly, just possibly I might add mangos and let it sit in a secondary for a month.  "MangoZaic."

I find 3711 to be anything but bland.  It might not be quite as assertive as the DuPont strain, but 3711 has character in spades all on its own.

Recipe looks good.  I'd suggest skipping the mangos for the first go-round and see how it tastes sans fruit.

 

I did something very similar with my first run of the 3711 and added 5# during high fermentation and it came out awesome :)


I agree with you on the DuPont comment too.  I like Thiriez's much better ;)

Got a Dortmunder lined up for Tuesday, another clone batch of Great Lakes' Dortmunder Gold.

 

Instead of using pils as the base (which I normally do), I'm going old(ish) school and using Briess 2-row, with a bit of crystal and wheat.  Cut my brewing teeth on Briess, and I don't think I've ever brewed a lager with it.  By the time I started making lagers more regularly, (about 10 years ago), I'd transitioned to using pils as my main base malt.

 

Debating between using all Mt. Hood for bittering/flavor/aroma, (based on the current spec sheet), or going back to when Cascade was the bittering hop and and a Cascade/Hallertau combo was used for the later additions (which was the case until a few years ago).

 

Some 34/70 will handle the heavy lifting in the primary.

Brewing the wee heavy that will have chanterelles added to it in a few weeks.  Racked the alt off the 1728 slurry that I'll be using.

Kegging some stout today. Gotta clean some kegs next weekend and start getting the kegerators ready for the wedding at the end of the month. This is really stressful.

Did not brew this weekend; but did a ton of brew house maintenance: tear down/rebuild of the keezer- replaced beer lines, deep clean of the taps and new gaskets. Went ahead and vacuumed bagged grain and hops for future brew days.

Like a lot of us, I buy in bulk. Due to laziness/save time, or the occasional time where I can squeeze in a impromptu brew session, I go ahead and pre measure grain and hops. Also, write down the water profiles and volumes, so when the time comes, all there is to do is crush grain and go.

But, I used part of my Income Tax Return on a Pico C. Trying it out for the first time today. Going to be brewing a Rogue Dead Guy Ale Pico Pak (5L batch).

 

I'll report progress.

Brewed an Orval-inspired beer even though I've never had Orval
BIAB, doughed in at 140 and direct fired to 162 after about 40 minutes. FWH with edelweiss and a bit of Hersbrucker and Styrian Golding with 10 minutes left. Imperial Precious (WLP 510) to ferment. Will dry hop with Strisselspalt then keg 3 gallons straight and 3 gallons spiked with orval dregs.

Looks like another Tuesday brewday is on deck.  IPA looks to be the frontrunner, a 2-Hearted Ale clone. 

 

Got some 2019 Centennial pellets from YVH that need breaking in.  Using my standard IPA grist (pils, Munich, and some C-40 and wheat to ~1.070 for 5.5 gal in the primary).

 

Columbus pellets (also from YVH) to bitter, then some large late additions of the aforementioned Centennial pellets.  Also likely that the beer will be dry-hopped in the keg w/ Centennial.

 

A fresh slurry of US05 will handle the heavy lifting in the primary.

Yes! I already have it... I will probably be brewing the Little RIPA pack this weekend (or next... I may try a Brew-Your-Own-Recipe this weekend)

 

I wanted to do the Dead Guy first because I can compare it to a commercially bottled sample!

 

But, I loves me some RYE!

I am brewing again today. Went with the Denny Conn's Little RIPA (Rye IPA) PicoPak.

 

When you start brewing a "PicoPak" it gives you the option to "Adjust" the ABV and IBUs. I went with the default settings of 5 (out of 10) for ABV and 4 (out of 10) for the Dead Guy Ale I brewed last week. Stuck with the defaults so I could compare it to a commercial Dead Guy Ale.

 

For this one, I adjusted the ABV from the default setting of 3 up to 10, and the IBUs from the default 7 up to 10. According to the FAQ, the adjustment range on Pico Paks is only about +/- 5%. So, it probably doesn't make a huge difference. The recipe specs say 6.3% ABV and 68 IBUs.

 

This will likely be my final PicoPak unless they have something I really, really want to try very badly, or they have a really incredible sale on PicoPaks. PicoPak prices are on the high side. A 5-liter PicoPak costs about the same as a 5-gallon recipe kit from a homebrew shop.

Made a Helles yesterday- brew day went smooth as glass Even did an extended (75 minute) mash and eked out another 5% in brew house efficiency. Added bonus.
