Took out the stout and brewed the alt today. I keep saying it, brewing 5 gallons of beer is SOOOOOOOoooooooo much easier to deal with. 4.5 hours start to finish BIAB. It just doesn't get any easier than this.

Totally agree, having gone to BIAB about 12 batches ago.  That and prepping water, ingredients and set up prior to brew day.  Try mashing in overnight too.

Stout on deck for tomorrow, to be served on teh nitro (as the kids say) for St. Patty's Day.  Using up the last of a sack of Maris Otter.

10.5 lb M/O

2lb flaked barley

1lb roasted barley

0.5lb C-40

Magnum (pellets, 11.1% AA), for 90 min

First Gold (pellets, ~5.% AA) for 15 min

EKG (pellets, 4.4% AA), at 10 and 5 min

Shooting for ~1.075 and ~60-65 IBUs for 5.5 gallons in the primary.

Still debating on whether to use 1028 or US-05 on this one.

I recently made an alt with 1728 and with the recipe I designed and fermenting around 55, it came out fantastic.  I love it because it has such versatility.  I can't remember which show of yours or brewer, but he mentioned his love for it and that it was his house strain.

Also makes a great IPA.  I always run it around 55.

I can attest that 1728 makes an excellent IPA, American or English.

Hoping to get my "stuff" together to brew Monday. I've had a hard time getting around to brewing due to less home consumption (exacerbated by the last batch not turning out too great). I have lager yeast saved from the last batch I finally kegged last week, a bunch of Swaen Pilsner and a pound each of EKG and Nugget.

I will probably tweak the previous lager recipe to get a better color (aiming for red without too much roast) and a single hop mentioned. I really like EKG in general, but not sure that matches the pilsner and lager yeast. Probably stick with a restrained nugget addition for bittering only.

Checked the alt this morning, I couldn't see any action in the airlock. The krausen was so high that the lid popped off the fermenter and it was leaking out the sides. I think it will be fine.

I take it this was not in the conical... If it was then wow!

All set up but the grinding.  Amber Lager on deck for Sunday morning.  Using all the Mecca Grade I purchased to do a Vienna.  Lost interest in that so I'm adding a couple other items to Amber it up.

6# Vanora Vienna

4# Pelton Pilsner

2# Metolius Munich

6oz C60

1oz Carafa III

1 oz Chocolate

Magnum up front

Hallertau and Cascade in Whirlpool

Super healthy slurry of 940

Are you adding the cashmere at 60 to up the IBUs? If not I may save that and use it late.

I forgot all about gigayeast.

Yes, I put the cashmere for the IBUs.

Gigayeast is a local company. I have a soft spot for stuff that comes out of my back yard.

I used them in the past but they are not as available to me as they used to be. Wrong coast I guess.

Just finishing up mashing the dunkel I had in the recipe area with a lot of mods... dropped the melanoidin to 4 oz, and changed the ratio of munich to pils to about 60%/35%

I just got back from vacation yesterday and I have a pale ale to transfer to a keg today and then I think I'll retire this 1056.  I would actually love to hang onto it but with this latest batch going to a keg, all ten kegs that I own will have beer in them and the "most empty" of those kegs is probably 90% full.  That means I would not have a keg to put a new batch into for longer than I care to keep this yeast.  This is probably one of the largest inventories of beer that I have had in a very long time.  So 940 is on deck and when some of these current beers are out, new batches with 940 will begin... and it will be glorious.  :D

Had a fabulous brew day with my new Megapot and all went off perfectly. Particularly pleased that all my numbers seem to be the same. Boil off rate might need a massage but other than that, all good.

Ken, I kegged my 940 Honey lager this morning and poured the slurry directly into the batch of Amber Lager above. The Lager I kegged smells and tastes fantastic.

Taking a short brew-break; will fire up the kettle again, probably right after St. Patty's Day.

Got an IPA and Irish red lager ready to keg; the IPA will get some dry-hops in the keg to dig on while sitting in the lager fridge.  A rather big stout is currently in the primary and will go into the lager fridge later this week to start cold-crashing.

But in the meantime, it's not too early to start planning my spring/summer brewing docket.
