I wish I had some Citra left, but I can't justify firing up the truck to go to the brew shop with so many hops in the freezer.

 

I hear that.  I bought some hops last month from YVH, to replace what I was low on, but I still have enough hops to last me a good 2 years from now.

 

Super grateful I have a Foodsaver.

Huh? Hazy? So confused as my 30 minute Helles is crystal clear. Volume I can understand if you didn't plan on a shorter volume.

Huh? Hazy? So confused as my 30 minute Helles is crystal clear. Volume I can understand if you didn't plan on a shorter volume.

weren't you the guy who said you traced a haze issue to a 30 minute boil that was too weak?

by vigorous I meant a good rolling boil, not James Bond acid pool dissolving a bad guy.

Well, I made beer. I know that. Wort in the fermenting bucket with a good slug of yeast, all in the new converted fridge/fermentor. I got optimistic and installed a blow off tube.

 

The strike and first runnings went well, Got full conversion with in 30 minutes of the mash.

 

I had some brain farts and misremberances about my water management after that. I started off with too little in the kettle at the start of the boil. In the ferment bucket, I got 4.5 gallons at an OG higher than I wanted. Thinking back to the extract days,I topped it off with a gallon. I will take what I can get.

 

I have to review my water volume labels. They are not marked integers. I guess I forgot what some of them indicate. Probably take the old ones off and start from scratch and recalibrate.

 

Also remembered the worse part of my brew day. Cooling the wort. My immersion chiller was not my friend today. I have a counterflow chiller from days gone by. I will have to do some testing and see if it is acceptable.

Wee Heavy is boiling now. Capped the mash to try and get a 60 shilling out of the 2nds.

Gearing up for brewing tonight. this is the 3rd time making this recipe- "8-bit ale", water and hops treated like a NEIPA, but without starchy Adjuncts. Brewing it for a buddy in the club for a trade. 

 

86% two-row

6% Vienna Malt

4% Light Munich

4% Special Roast. 

 

Hops:

 

60- 7.2 AAU Horizon

15- 7.5 AAU Chinook

10- 5.3 AAU Mt Hood

KO: 15 AAU Chinook+ 5 AAU Mt Hood

Bio: 2.5 oz Galaxy 

 

Yeast: 1450.

I assume you mean the beer so that is:

11# Pilsner

1# Munich

.5# Carahell

 

Hops are all Hallertau Blanc

 

14g @ 60

42g @ 10

42g @ 5

56g @ 0

 

Water is 

Ca - 52

SO4 - 75

CL - 38

pH- 5.37 - I did not take a pH reading because as I was milling my grain I was stink in the eyelid by a hornet so at this point I said F it and lets just get this batch going.

 

Yeast - 2 packs 34/70 dry

 

The brewery upgrades are two new Spike kettles.

Successful Friday brew day; another iteration of American Pilsner. This slurry of S-189 & 34/70 is getting better and better. It seems to have developed a more pronounced lager’y flavor and is dropping out faster with quicker clarity. It’s on its 4th pitch. Wondering how many more I can pull off.

That batch is in the books. Few issues like low gravity and too much wort but that is to be expected with new stuff. I will make some tweaks and try to get another batch in this week.

Eta:these Hallertau Blanc smell amazing!

Just got the Z set up tp start early tomorrow.  I'm using Root Shot malt from CO for the first time.  Hoping this beer turns out as well as the others I've had made with that malt.
