Lake Granbury.   It's a dammed up spot on the Brazos River.   Not so great for water sports, but nice to look at in the evening after work.   :)

In early September I had part of a keg of hoppy blonde that I swapped out for another beer because I had people coming over. I bottled the rest of that keg into six 16-oz bottles (like the kind Ayinger comes in) and four 22-oz bombers and put them in the fridge. I just vented the keg, connected a tank & a cobra tap and turned the gas on just high enough to slowly fill the bottles and then capped them. I'm having one today...

Brewing up my session Pils, finialy, and having a Vacation Lager while I wait. Pretty happy how this beer came out
Not sure I will use Wlp838 again though.

That looks nice Drez. Tell me about the 838. I have very little (or possibly NO) experience with it.

 

Supposedly of the same origin as 2308, which I am a fan of.

Maybe it was the recipe, water or something but it seems a bit too malty and not quite dry enough.  I will say that it is getting much better as time goes on and this may just be one of the strains that needs some time to come into its own. The first few weeks on tap there was a definite yeast bite to the beer that made for an off flavor.  I just like 833 better overall.

Okay so this was a beer I was calling COPPER LAGER... 6 lbs of pils, 3 lbs of Weyermann Munich 2, 8 ounces of CaraMunich 1 and some Carafoam. Magnum to bitter and then an ounce of Tettnanger, Spalt and Hallertau all in the last 10 minutes and fermented with S-189. I didn't really get the color I expected but it's great. That's the second glass from the keg and it's crystal clear.

Okay, Oktoberfest has officially started here. My keg of Vienna Lager went down tonight and Festbier has taken its place...

This is by far the best Oktoberfest Lager I have made. 65% Swaen Pils, 35% Avangard dark munich, 28 IBUs of Magnum for 30 and the Augustiner yeast. This will be my permanent recipe for this style.

Both those beers look good. Matt, you have made me think about bringing the nitro setup back out. Ken, that beer looks wonderful. I have all the ingredients to make it other than time!

This is batch #4 with that yeast and I am now concluding that some of the best beers I have made in 18 years have been made with this yeast. Pilsner, American Lager, Helles, Vienna, Festbier, Dunkel, American Lager again. Tomorrow I'm kegging the last batch with this yeast and then I will have to retire it so I don't press my luck. Every single beer has been stellar. Cheers Drez.

Omega Bayern Lager yeast. I mentioned it over HERE.

I will be keging my first beer with that yeast this weekend. I am in debate of what I am going to do next - Pils,Hells, Dunkel or Vienna. I know I want to have a Dunkel on tap for when family comes over for my daughters b'day (Nov 19) but I think I can sneak one more in before I need to brew it. Can not wait!

The Vienna Lager I just finished up was particularly good. It's loosely based on Jamil's recipe. I think that with the quicker lager method you could sneak in a Vienna and then the Dunkel without issue. I'm looking forward to hearing your opinion of the first beer with this yeast.
