Beer looks gorgeous! I share the same sentiment with S-189, never been super trilled with it. It fermented well at low temps, (took forever to start fermentation) and drops super clear, but don't care for the flavor profile. Apparently, the yeast strain is Swiss in origin.

agreed, although it seems to be OK in maltier darker lagers, dunkels etc than lighter types like Pils

This was a blend of pils and Vienna malt. I find a off taste with it as well.

Agree. I have diamond going now and denny and Ken compare that to 2124 so I am looking for to trying this beer.

I think we all agree on the S-189. I have used it numerous times and it makes beer. It's predictable and it's reliable. But it doesn't scream out a specific character the same way that Bayern, 2124, 940 and some other do. Drez, the beer looks great.

There is just something about it. You shouldn't have your hopes TOO high because then it could be a letdown. When I first had Victoria in Mexico (2002, I think) I got this great character from the beer and I probably didn't realize that it was coming from the yeast. At some point I got my hands on 940 which was a temporary/seasonal strain at that point. I put a recipe for Victoria together and I could immediately tell that the character of the yeast is what I first picked up in Victoria. I think I mentioned this once before but at some point I was in the garage brewing and there was a cardboard box out there with some random beers in it. I picked it up to move it and one corner was wet and a bottle of Victoria fell out and broke on the garage floor. OMG, the smell of that beer filling the garage was awesome. I'll be out on vacation starting next weekend but when I get back a starter of 940 is going to be made and I have my recipes ready!
