You should read the article on Irish Water in Zymurgy. It delves into exactly that subject.

Is that online somewhere? I don't get that magazine.

just as an update i didn't touch my water on this brew.  since i use colorphast strips i can't be 100% accurate but I'd guess I was around a pH of 5.4-5.6.  so far i'm not seeing a problem but I'll have to report back when the beer is cleared, kegged, and carbed.
