Is this a slow starter?,  I have a starter going and dont really see much activity the next day.

Not in my experience.  Normally a strong starter and fermenter.

Well this morning around 7, no bubbles.   Now bubbles like crazy so my brew day is on.

my experience with that yeast says to leave plenty of headroom in your fermenter. Once it gets going, it really takes off.

Yup.  You shouldn't have any problems down in FL, but this baby likes it warm.  I usually ferment it at 72-75.  YMMV

It will sit at 62 for a week then Ill let it creep up to 72 during the next two weeks of fermentation.

Cant, at work,  Plus its in a plastic bucket,  Dont have a glass bottle big enough.

 

Soon Ill get me a 6G glass bottle for fermentation.

You have done something way wrong if your fermentation lasts 3 weeks  :crazy:

Its his recipe, if he says let it ferment for 3 weeks Ill let it sit for 3 weeks.

I guess that is a sort of misunderstanding of terms.  Letting something sit doesn't mean it is fermenting the whole time.  Sorry for this misunderstanding.  I was thinking this thing was chugging along for 3 weeks.
