I just finished carbing my Light Lager fermented with this yeast and am impressed. https://www.brews-br...696-light-beer/

It finished at 1.005 from 1.036, 4.07% ABV. Yeast character is minimal and the beer is very clean with a slight malty sweetness in the aftertaste. It dropped clear quickly during the cold crash in primary but still needs a week to be crystal after racking/carbing.

Pitched 1 pack into a 1gal drauflassen starter, spun it for 6hrs then let it sit undisturbed until the 30hr mark and pitched into 6.5gallons total.

This beer is extremely poundable. Had a pint after mowing last night and it didn't last long. If you like the convenience of dry lager yeast then this is one to keep on hand.

Love that yeast...been using it for years.  It's Zurich yeast, from the brewery that does Samichlaus.

so what styles is that yeast suited to?  how many packets per 5 gallons of normal strength wort?

I was wondering how that beer came out.  Any plans for the slurries?

I like the results on this little beer. Still has malt character even with 86% attn(using amylase enzyme)

Morty, it's pretty neutral and I could see it working in anything you wanted clean with a bit of malt character. There is zero chance of hiding flaws in this recipe and any strong yeast character will stick out and dominate. This yeast let the malt shine through. Best version of this recipe I've brewed.

I'm gonna run it through my standard recipes--Bopils, German Pils etc. Next up is my hoppy German Lager. Like a German APA using Spalt Select hops pretty heavily handed.

That's my favorite one as well.

so how many packets per 5 gal of wort?  that's part of what's kept me from trying out 34/70.  I'd have to pitch 4 packets into 10 gals!

They aren't that heavy.

Same ratio. I pitched 1 pack into 6.5 gallons after my drauflassen starter. This was a slow starting yeast and wasn't rocking crazily even after 30hrs. I just treat a pack of dry yeast like a single smack pack or WL vial.

so without a starter it sounds like maybe 2 packets?

Probably get away with 3 packs for 10gals pitched rehydrated/dry.

This yeast is best suited for maltier styles, but works pretty well for about any lager.

I concur. If it can wring malt out of an all Rahr pils 1.036OG beer after amylase enzyme then it's pretty malty.

I've always had a little flavor in my light beer that I didn't like and taste in varying degrees in most commercial light beer. Don't know if it's an adjunct flavor, yeast/DMS/acetaldehyde/sulfur derived. This beer doesn't have that taste. It did before lagering but dropped out after primary cold crashing for ~10 days.

Interesting. I have not tried a dry yeast in a long time but if you guys like it that much, I would certainly give it a try. Could I make a 2L starter with it or should I just "sprinkle", rehydrate or what?

I have never done more than just sprinkle it on.  No starter, no rehydration....no problems.  I really recommend this yeast for things like bock or maibock.  Makes a decent pils but really shines on the maltier stuff.

I do like a nice bock every now and then.  are you also 2 packets per 5 gallons?

Thanks Denny. 1 pkg per 5 gallons is okay? I'm curious about this now and will look for it online... I know my local does not carry a good selection of dry yeast.

EDIT: Oh... 2 pkgs for 5 gallons?

I used something like 15g dried for 5 gallons.  Like Denny, just sprinkled on.  Before it was available in singles, Denny and I split a brick of this stuff. My IN State Fair first place Schwartzbier used this yeast.
