Pitch some fresh, healthy yeast at bottling. Around half a pack of dry yeast for 5 gallons, properly rehydrated of course.I'll be making this in the next couple of weeks. I've never brewed a high gravity beer like this before and I plan on bottling. Is there anything special I need to do for carbonation? I'm concerned the yeast will be too tired to do the job.

I added some of my house bug culture to 5 gallons of this at kegging ~2 months ago and I just pulled a sample to see how it's progressing....damn this is nice. Good fruity Brett note with lots of stupid. If anyone makes it out to NHC this is one of the beers I'll be pouring at club night....along with the other 120 gallons we have dedicated for club night and the hospitality suiteBrewed 10 gallons of this yesterday and hit an OG of 1.106. It smelled great going in the can. If this gets down to where it should that's >11% of stupid goodness. Thanks again for the stupid recipe alpha
