I'll be making this in the next couple of weeks. I've never brewed a high gravity beer like this before and I plan on bottling. Is there anything special I need to do for carbonation? I'm concerned the yeast will be too tired to do the job.

Pitch some fresh, healthy yeast at bottling. Around half a pack of dry yeast for 5 gallons, properly rehydrated of course.

Brewed 10 gallons of this yesterday and hit an OG of 1.106. It smelled great going in the can. If this gets down to where it should that's >11% of stupid goodness. Thanks again for the stupid recipe alpha :cheers:

I brewed this yesterday (10/4) and everything went smoothly. My OG was 25 (perhaps 24.5) on the refractometer -- so that puts it near 1.100, right? The yeast starter (3787) has it chugging away at the moment. I hope it can get down to 1.015-ish. I'll proably make another batch in 1-2 weeks and dump it on top of this yeast slurry.

Its been over a year since i brewed this, but I dont recall doing anything special with the coriander before adding. I checked my notes, nothing there either. I do remember that I purchased mine from the LHBS, so I would have used it as is, whether it came whole, cracked, or ground.

I just kegged mine. I hope there wasn't an issue though as the FG was really low (1.007). It was a violent ferment, the airlock blew off, then it seemed to kick into high gear again a couple of days later when I gently swirled the carboy. There was no "off" smell I noticed when kegging. Do you think it might be a good idea to add some honey (perhaps diluted with water for easier mixing) for some sweetness at this point?

I did an early sample on this and it's pretty damn good! I'll leave it as it is. It tastes Duvel-ish for lack of a better word.

I added some of my house bug culture to 5 gallons of this at kegging ~2 months ago and I just pulled a sample to see how it's progressing....damn this is nice. Good fruity Brett note with lots of stupid. If anyone makes it out to NHC this is one of the beers I'll be pouring at club night....along with the other 120 gallons we have dedicated for club night and the hospitality suite
