Ooh, A big beer! Right up my alley. The Mammoth lager I just kegged is 10% abv.

So I had kind of forgotten all the mess and hassle of a really big beer - the cleanup was special - but it's in the fermenter, the black saison is actually pretty nice given it was 7 days old and I'm expecting a volcano of yeast tomorrow morning......best case scenario is a slower startup but there was at least a pound of yeast slurry in there when I dropped it in....

Mashed in on a maibock this morning. Going to get a pale ale or IPA going next week. Haven’t brewed since last summer, sadly.
The Maibock sounds nice. I brewed three batches with this Omega 113 so far and I have more planned. Mexican lagers all summer.

First brewday in almost 3 months. IPA with lotus, rakua, and citrus hops. Going to ferment in the upper 90's with kveik.
Crazy. Fermentation is underway already. But I did something today I've never done before. I was busy, a bit tired from a bike ride during the mash, and I did a gummy. I meant to add a pound of sugar but I forgot! I added it after it was in the fermenter. I boiled it in a small amount of water and let it cool. Forgot to say, I got up this morning at 2:45 for work (just a 4 hour shift).

I'm running Omega 113 Mexican Lager right now. I have made five batches with this yeast and last night I ran a Mexican Dark Lager into the keg and harvested the yeast. Today I'm making a Munich Helles with it .. which I know sounds weird but that's the plan. 80% Avangard Pils, 20% Swaen Munich 2, About 21 IBUs of Perle from the start of the boil and Omega 113.
