went mostly without a hitch.  still finishing chilling in the chest freezer because I was only able to chill down to about 70F using tap water and then some recirc with ice.

efficacy was 75%, no sparge (BIAB, sort of).

18lb pilsen

0.5 lb carapils

0.5 lb carahell

1oz saaz FWH

1 oz magnum @ 45 min

2 oz saaz @ flameout

3 oz saaz @ hopstand

going to ferment on 3 packs of diamond lager yeast.

I might brew this weekend. I'm leaning to something with Kveik as I'll only have to chill the wort to 100.

I'm already wondering if I need to make more Baltic Porter when this lager yeast is ready to get harvested.

Wish I could get my head back into brewing .. sold off 4 more kegs yesterday.  I did not need them anyway but it may be the start of more.  Unless I change it up for smaller batches I just do not see getting back into it.

it seems like there are some great equipment options for this now.

Diamond lager yeast is 2 days to get going every first time for me. Subsequent repitches are pretty quick though.

Brewed an IPA on Thursday. Did a mix of Chinook and Mosaic, probably a bizarre combination, but haven't used Mosaic before and wanted to try and not just have overwhelming tropical fruit. Have a bit of a beermergency as my amber is almost out. Have a keg of pils just finished carbing, though. Next beer will probably be a steam beer as discussed in other forum, need to order some supplies and get that going in 3-4 weeks to replenish the stocks.

Nothing bizarre about that hop combo.

When I first got my easy dens I would take reading for all commercial beers and lagers were typically in the 1.004/5 range.

Agree! Chinook is great with anything... Chinook and Citra are great. Agh brewing... Sounds fun... Lol

I am a fan of Chinook and Citra both. I like citrus and pine type go flavors. I generally don't like overwhelming tropical fruit type flavors but think they can be layered in successfully. Certainly smelled good while brewing.

Just get an Anvil and be done with it, hvb! Simplify your brew day. Too cool of a hobby to lose it you enjoy it. My brew day is 4 hours but with probably about an hour of actual activity, hopefully you can find that.

So looking through my notes I have made beers where the finishing hops are a combo of chinook, mosaic and citra.  I haven't found one with just the first two yet but that doesn't mean using just those two won't be delicious.

I have heard this, but never experienced it.  Usually in a few hours for me, 12 at most.

I might be underpitching a little bit.  this was 3 packs in ~11 gal of 1.042 wort @ 52F.

Made a Kveik IPA yesterday. I managed to get a brew day in between thunderstorms. I also realized that I was out of propane to get the task done while heating up the water for the mash. While mashing, I filled up 4 tanks, so that's that for a couple of months or so. The Voss Kveik yeast predictably took off fast. It's dropped from 1.070 to 1.032 overnight at 97°.
