I'm brewing my White Christmas Stout (wife's request) in anticipation of my brother, cousin, and spouses coming down in November. It's currently mashing in. Up next is another Baltic Porter and an IPA. Hopefully I can have them ready for the get together.

I have my first beer in years chilling right now. We’ll see how 37-70 works fermenting in the low 60’s.

I have pressure fermented in the 60's with 34 70.

Brewing Denny Kong today. Over $100 worth of hops in 11 gal, so hopefully I won't dickchimp it

Baltic Porter is now in the fermenter. Easy brew day as I weighed and crushed my grains last night as well as got my water and hop additions taken care of too.

There's active fermentation already. About 2 hours since pitching dry Lutra Kveik.

At least on this one. The version we had brewed for HBC may be my favorite IPA of all time, so I'm trying to get close to that. The big difference is that for that one the hops were donated, and I'm buying them now.

What hops did you use? I'm going to use the last of my Cryo Pop in my next batch.

Just brewed a Kveik (Hornindal) Tropical IPA. Last brew I needed to make before my family comes down in 11 days.

Fermentation is underway. I was a bit concerned with the yeast. It was liquid Hornindal and when I took it out of the garage fridge the other day, it almost appeared slightly frozen. Anyway, seems fine now.

It did start fermentation fairly quickly but I wonder if a portion of the yeast did freeze. Fermentation is still ongoing but it's going at a usual ale rate, not the crazy Kveik. People do under pitch this yeast by a lot, so I guess I'll see how it goes.

The beer turned out fine but it did take longer than usual to finish.

Also, while I don't really need hops, I ordered 3 pounds of Lotus t-45 pellets from Michigan Hop Alliance. I've used lotus a few times now and it's become my go-to hop for IPA's. $10/pound was too good to pass up.

Kegged and drinking. Pretty good. It’s good to know that I can ferment a clean lager in my basement.

I started a string of beers with 1056 last week.  Memory Lapse Pale Ale was first.  Then there will be a blonde ale with Perle and Crystal, a Dark Ale with Nugget, something I have been calling Signature Ale which has some Red Ale action with Northern Brewer and finally a Cascade Pale Ale with Willamette and Cascade (same combo as Lagunitas) and then it will be on to more lagers .. Omega Mexican will be first and then Omega Bayern after that.
