Made my winter warmer yesterday. Gravity came up a bit short for the second time in a row. With a bigger grain bill I forgot to lower my efficiency when setting up the recipe and I also think I might be over-estimating how much loss I have from boiling and/or equipment losses. Anyway the recipe is from Craft Beer for the Homebrewer and it's the Ill Tempered Gnome from Oakshire.

Hey, I've just been drinking this year's version of it from Oakshire!

Nice! I've never had it but liked the way the recipe looked so I gave it a go. I'm not sure what yeast they use (something Wyeast I'd guess) but I re-used some WLP007 I harvested from my last batch.

Bottled/Kegged the Vienna Lager, rinsed the yeast and salvaged enough for two more batches.

 

Brewing an Amber Lager right now

9lbs 2 Row Pale

1lb Crystal 40L

.5oz Magnum at 60min

2 oz Liberty at 10min

2 oz Willamette at 1min

1 oz Saaz at 1min

Missed my SG by .003.  Brewed in the kitchen and was able to get the place cleaned up before the wife got home.   I'd call that a win.

Typical Hines….missed estimated gravity. Should have been 1.053-1.056. I’m at 1.043

Doesn’t matter what I attempt to adjust, my gravity seems to always start around 1.044

I'll probably reuse the Helio Gazer yeast from a couple of weeks ago. It's still sitting in the fermenter (still not exposed to air). Minus the Phantasm powder this time, just a tropical IPA. Friday is open...

1.043 gravity on brew day, I didn’t pitch a starter, just tossed dry yeast on it….I’m already at 1.012

Probably won’t make a starter on future low gravity beers.

Good to know.  This has fermented down to 1.005.  That's the lowest gravity reading i've had since I got back into brewing.

Just got around to doing this today. Going with Vic Secret and Azacca.

Whoa! This got away from me. I used the Helio Gazer yeast cake and fermentation took off fast. Still, everything seemed fine this morning at 5 am. Gravity was down from 1.072 to 1.050 and temperature was at 68. I got home at 1 pm and the gravity dropped to 1.029. But, the temperature rose to 78 fucking degrees! Oh man, I put ice bottles in immediately, it's dropping slowly.

Ready to dry hop via magnets. I just hope those high temps didn't screw it up.

can you pull a sample first?  even early on it's usually obvious if things really went to hell.
