Made a session hopped mead today with US05. Gonna throw it in a keg and force carbonate it when it is done.

But you can't do chores without beer so...Hoping to keg a Vienna this afternoon. No brewing on the horizon for at least a few weeks. I'm replete with house chores on the other hand.

True that. I have a Belg Amber on tap and my Beet Red American and a cider that I'm going to dump b/c we've just had enough of it... Maybe a gallon tops. Need room for the Vienna

Here it is. Although I may alternatively go with the same total weight of hops at each step and use 2:1:1 Citra:Centennial:Simcoe. Thoughts? Critique?

Mash @148ºF/40 min. then 158ºF/40 min.
Warrior @60
135g-2:1 Galaxy:Nelson in 160º F whirlpool
84g-2:1 Galaxy:Nelson dry hop 48hrs into fermentation
84g-2:1 Galaxy:Nelson dry hop in keg
1 pkt. each US-05/S-04 (No 1450 on hand so going with the Drez dry yeast special blend)

Looks good to me! I would do a single infusion at about 155 but I know you like to do that mash profile so I assume you know how it will react in the beer.
Yeast blend looks good, I would keep it about 66-67*.

Galaxy/Nelson.
A smidge of Citra would be good in that blend as well.

Thanks. That mash schedule is tailored to be quite attenuative. Should I keep the US-05 in the blend or go straight S-04? IOW will it get too dry with the 05 in there? Probably use 150ppm each of SO4 and Cl, BTW.

That is my worry as well. I would then just go with the S-04 and ferm at the same temp I put above. Water profile is about what i would expect and should work out fine.

made a Helles on Sunday night- pitched on Monday morning. Using the quick lager method; I tested the gravity this morningand its at 50% attenuation, time to ramp up the temperature. Fermenting with WLP 830,(with a 5L starter. for this beer, I adjusted my pH to 5.1 during the mash- sat at 54 degrees until this morning- The hydrometer sample tasted really malty with a slight smack of sulfur; Have high hopes for this brew.
