I measured out my water this morning in hopes of having a boil Sunday morning, a Red Lager(thanks to Chils). I might drop out 2 ounces of the Caramunich. I don't want too sweet but I do want the red.... thoughts on that???

Estimated OG: 1.050 SG, Color: 15.5 SRM, IBU: 19.9 IBU's

9 lbs Cologne Pils Malt (4.0 SRM) Grain 1 77.4 %
2 lbs Vienna Malt (3.5 SRM) Grain 2 17.2 %
8.0 oz Caramunich III (76.5 SRM) Grain 3 4.3 %
2.0 oz Midnight Wheat (744.0 SRM) Grain 4 1.1 %
0.50 oz Chinook [13.10 %] - Boil 20.0 min Hop 5 14.5 IBUs
0.50 oz Mt. Hood [5.30 %] - Boil 10.0 min Hop 6 3.5 IBUs
0.50 oz Mt. Hood [5.30 %] - Boil 5.0 min Hop 7 1.9 IBUs
Bayern 4th use :)

It's really hard to get RED without the beer being pretty DARK.  I find that Special B has more red in it than any other malt and I happen to like Thomas Fawcett & Sons Dark crystal #2... it has a lot of red in it too.  But to push it away from amber and get it red you need the midnight wheat or carafa special 3.  The last time I had my Bordertown Dark Lager on tap, my son and his girlfriend were tapping some and both commented "it looks really red" but they were holding it up to the light and the beer is DARK but it creates some red glints of light here and there.  That Budweiser red lager looks sort of 'pale' in color but it does look red almost like some coloring was added.  :covreyes:

Nothing this weekend, but hoping for a brewday early next week, before the 4th.

 

Got a major exam on the 5th, so some brewday decompression prior to would be nice.

 

Perhaps a clone of GLBC Burning River Ale, featuring some of the Cascade hops I harvested last week, + some 1469 slurry? :scratch:

Are you making this as a low-O2 beer with spunding, no finings, air conditioning and leather seats? :P


So, I just moved it to a keg with 4oz cascade pellets and an ounce of cryo cascade. Looks like I will spund this one. Keg is equipped with a floating dip tube.

Going to be a really hot weekend/week coming up but thankfully it is cool in my cellar!  Hope to brew something and it will be a lager because I need to get some of those going.  I am also floating the idea to do a kettle sour.

Do your rye pils. I have that one on my radar per your suggestion. Just screams summer to me.

That is the plan.  I have planned on that one weekend and it just did not happen and got moved.

I get a nice amount of rye.  I think I would like it at 80/20 but I am lazy and like the simple amounts of grain.

Denny's always mentioned rye needs to be present in the 17% and upward. I can't really say but I can say I liked Ruthless Rye and felt the rye was def there. Sadly that's my only example. 80/20 would prolly be spot on...

After I commented to Pickle I went back and upped it to 2.5#'s of rye for a 80/20.  Give that a go this time!!

Work has me a little behind and I'm considering postponing until tomorrow morning.  That would not be an issue since it's over 90° here and I could find better ways to spend my Friday evening.  I did just shoot a sample of the helles that I made 2 weeks ago into a cup for a taste test.  It's young but it's very good... no diacetyl or other off-flavors so that will be sent to a keg this evening.

Prepped for tomorrow.  I'll need to harvest yeast since a starter didn't happen.  Am Wheat with a late megahit of those Hallertauer hops that were almost free a while back.  Hope it doesn't get too grassy.  I'm thinking about using the IC to drop it to 170df or so and do a hopstand for about 15 minutes.  Shooting for 30 IBUs of all Hallertauer.

I'm about halfway through my mash.  It's already 90° here.  The Bayern starter got active and then started to settle a bit so I sent it to the fridge last night.  Today it's settled nicely so I can decant some of it and the smell of it is lovely.  Lovely.  For anyone brewing today... enjoy and stay cool.
