I got some pretty punchy stuff out of Mosaic in NE-style. Took a good while to settle down. Maybe you've used it before in NE_style I dunno so YMMV. Columbus was mixed with many others when I used it NE-style and came across very nicely FWIW.

I've found Mosaic + Columbus to be excellent together.

 

One of my new fave IPA hop combos.

Nope, i work from home, and I figure some beer-pr0n torment is fair game, while I babysit contractors during our kitchen remodel.  :frank:  :D

Wondering how much Motueka etc. Curious if you picked up any citrus/lime characteristics.

Yes, big time. This is my latest iteration of a recipe I've been messing with for a while. It is the best one so far and I'm not sure I will change anything from here going forward. Specifically I used 15g of Motueka at 15min and again 0 min. Then after clearing the yeast, it was dry hopped with 84g Motueka.

Man, that's a bunch at the back end. Did you bitter in the front with anything? I used Motueka a few times in Saisons that came out really well. Then I overdosed a batch and tossed it. I got a lime/mint thing and yuck....

Never had mint from motueka. That sounds like a mojito. Lol.

 

It was a 30 min boil with 14g of Apollo at 30 min. Dried out to 1.000 with 3711. Paradoxically it has nice med. body to it though.

 

3711 is a bear to drop out and I have to say that getting the yeast out before dry hopping is a key here as much as any beer. Sometimes when the yeast drops in some beers after dry hopping there seems to be a fractional removal of hop flavor, IOW sometimes it seems to take certain flavors and leave others, sometimes less pleasant ones. I would fine the beer to get the 3711 out in a reasonable time frame and then dry hop it.

Sage advice. I have a bag of 3711 on deck for a Pale/Naked Oat Saison with Aramis. Keep you posted.

I don't know what it is about this beer but it came out fantastic. This is a very pale beer and it has been very clear from the beginning. This was the half Barke Pils and half Rahr pale malt for the base malt and then a pound of flaked corn and 4 ounces of Carapils and then Magnum to bitter and just one ounce of Hallertau with 5 minutes left in the boil and S-189 on the yeast. It's very crisp and the finish is nice and dry. It tastes more like a German Pils than an American Lager. I realize the weather is cooling off and more robust beers are around the corner but this is the beer I chose to drink tonight and it's really nice. Cheers peeps.
