. And 1762, thats a belgian abbey strain… something makes me think that coming from Ken it's a typo.

Shoot. Maybe I was thinking 1275. They keep coming out with all of these VSS strains and I can't keep the numbers straight in my head anymore. I do see that Wyeast shows 1028 as a medium-to-low floccer which is mildly surprising to me because I've always made nice clear beers with it and never had an issue getting it to drop. As far as my secret Belgian brewery goes, okay I admit it. Late at night when everyone is sleeping, I have been making a basement below my current basement. I scrape away the cement floor with a spoon and during the day I cover the hole with a picture of Raquel "fuzzy britches" Welch. Eventually I created a huge sub-basement where all of my Belgian experiments take place. Those beers are never consumed in the light of day. If I'm feeling particularly "Belgiany", I go down there and drink all I can in the dark and then come back up to the 'normal' basement and quickly stuff my mouth full of pretzels to cover the harsh and nauseating smell of the Belgian beer I just downed. {exhale}... I feel SO much better now. :P

I forgot to mention that sometimes my wife comes into my beer bunker looking for me but all she sees is the poster. She says, "Hmm, Ken disappeared like a fart in the wind! What say you, Miss Fuzzy Britches!?". But then she smells the Belgian beer and finds me anyway. :|

okay - had a minute so worked on the recipe a bit.  10 gallon batch, I'm going to no-sparge it.

 

16.5 lbs CMC pale ale

0.5 lbs victory

1.5 lbs C75

2 lbs flaked barley (if I don't have enough I'll use flaked oats or wheat or white wheat to make up the difference)

 

mash at 155F

 

1.5 oz magnum @ 60 minutes

1 oz EKG, 2 oz Cascade, 1 oz Cent @ 1 minute

2 oz EKG, 2 oz Cascade, 2 oz Cent @ 165F for 20-30 minutes (hop stand)

 

ferment half with US-05 and half with S-04.

 

specs:

OG: 1.051

SRM: 10.7

IBU: 42

I'm now going to start messing with the water profile a bit while you drunkies give me some feedback.  :cheers:

Water… SO4 to probably 100-150ppm or more if you like sulfate. Other than that add lactic to get pH correct.

 

If it were mine I would just add all the hops to the 165F stand, that is unless you need the 1 minute worth of utilization. :)

 

Otherwise this looks like it has potential to be a great beer to my tastes.

 

Will love to hear your perception of the difference between the hop character of the US-05 vs the S-04 version. Please update!

right now I'm taking SO4 up to 344.  I've done this before and I like it.

 

I do not need the 1 minute of utilization.  I just figure I'll get a little flavor contribution this way.

How big is your MLT? Seems like you would need a big MLT to no sparge a 10g beer, I have not had my coffee yet so I may be over thinking this!

so if I account for some hop absorption this is going to be close to capacity for me.  I may have to do a teeny tiny batch sparge at the end.  or I could do a teeny tiny fly sparge while I'm draining the tun

It'll be fine if you add a bit more water once you have room in the tun.

how crazy would it be to sub/add in some citra for some of the hops I have here?  I hear it's pretty powerful stuff so perhaps I should use a light hand?

Cascade and Citra would go well together.  I may go 2:1 Cascade to Citra.

I could use my current hop bill and then use the citra to dry hop.

 

Have you ever used citra with EKG?  I know this is kind of an odd beer but that's what I'm going for.

No but I loved EKG and Cascade together.
