No but I loved EKG and Cascade together. 

 

citra is kind of like super citrusy cascade right?  I've never used it so I'm not sure what to imagine.

I didn't think so.  I get a ton of grapefruit from cascade, not so much from the citra.  IMO it's an animal of it's own.

have to agree with John here. 

 

If you have not played with citra I have a wheat recipe I can send you.  does not use a ton of hops but is great

I would say it's on the tropical end of things but not over the top like Mosaic.

Agree with this.  Although, some times in quantity you can get a little cattyness or even BO from it I have found. Strange as that sounds, it works.

I can't imagine tropical going great with EKG but what do I know?

It had that aromoa for sure.  it was a crop or two ago though.  I have not used it as the sole hop in those quantities since to see if I still get that aroma.  With that said, the beer was awesome and went quick.  Everyone loved it.

okay - had a minute so worked on the recipe a bit.  10 gallon batch, I'm going to no-sparge it.

 

16.5 lbs CMC pale ale

0.5 lbs victory

1.5 lbs C75

2 lbs flaked barley (if I don't have enough I'll use flaked oats or wheat or white wheat to make up the difference)

 

mash at 155F

 

1.5 oz magnum @ 60 minutes

1 oz EKG, 2 oz Cascade, 1 oz Cent @ 1 minute

2 oz EKG, 2 oz Cascade, 2 oz Cent @ 165F for 20-30 minutes (hop stand)

 

ferment half with US-05 and half with S-04.

 

specs:

OG: 1.051

SRM: 10.7

IBU: 42

I'm now going to start messing with the water profile a bit while you drunkies give me some feedback.  :cheers:

For 10 gallons that will be subtle but I think you'll probably notice it, especially if you are already familiar with the flavor. Although it might just accentuate the Pale Ale malt flavors a touch at that level. So I guess it depends on what you want from it. I like Victory so if it were mine I might go up to .75# or even 1# for 10 gallons.

I think subtle is what I'm going for.  I don't want to go too nuts with the toasty flavors.  just a hint.

so would anyone like to perhaps make some predictions about how the two beers will compare (S-04 vs US-05)?  I plan to ferment them under the same conditions, that is with my temp probe kind of jammed inbetween them with temp controller set to something like 63-64F initially and then I'll let it naturally rise up to 66-67F after a twoish days.
