okay - revamped recipe:

 

grain bill:

10.0 lbs US 2-row pale

10.0 lbs Golden Promise (using up old stock)

  1.0 lbs carapils

  0.5 lbs C120

 

mash at 153F

 

hops:

2.0 oz chinook (FWH)

1.0 oz chinook (60 mins)

1.0 oz palisade (10 mins)

2.0 oz palisade (5 mins)

2.0 oz cascade (flameout)

2.0 oz cascade (whirlpool)

2.0 oz chinook (whirlpool)

 

2.0 oz chinook dry hop in primary for a few days

 

dry hop in kegs as needed (will only have an ounce of chinook left so may need to partially use something else)

 

ferment on US-05 (probably 2 packets)

My experience is that FWH gives more flavor than 60 minute hops, but much less bitterness as the alpha acids get more oxidized and less isomerized.  I'd say FWH the Palisades, but only add the Chinook after you have a nice rolling boil.

a good point - i would like to save more chinooks for dry hopping anyway.

  I have a similar experience.  I use hops for my FWH that I would tend to use at 20 minutes and not specifically for bittering.

changed cascades to cents since I don't think my cascades have good enough aroma.

I really like love Amarillo :wub: .  Something to also think about is you can create your own "Centennial Type" by using 70% Cascade and 30% Columbus.  I do not think it will be exact but that gives you something to play with if you want to keep with spirit of Centennial.

where was the last scan for you? mine departed from troutdale, OR on wednesday and I haven't gotten an update since then.  it was originally supposed to get here two days ago (saturday).
