Zym... any updates for us yet?

still hanging out in primary - I'll probably move it to secondary this weekend to help it clear up a little before I bottle it up!

I just transferred to secondary on gel after crash cooling over night in the beer fridge. Some didn't fit in my carboy so I mostly filled a 2L and I'm carbing it up with a carbonator cap. From what I tried I think it has a good chance to be pretty solid but it's a little too young to tell right now. No off flavors - just a little yeasty right now.Gravity made it from 1.061 to 1.008. (about 7% ABV)

tried some from the 2L. really cloudy right now but delicious. the taste of the pils really shows through. I've never used pils as the main base malt for an ale before. It's nice. I can faintly detect the orange peel but I don't think I'd be able to pin down the coriander and star anise in this which at least means I didn't put too much in. I think once I bottle this up and it's carbed it's going to be pretty awesome but I'll be sure to report back on that.next up is deciding how many volumes of CO2 to shoot for. What says the board? As I remember it rare vos is fairly carbonated like most belgians tend to be.

I would say 3 vols of CO2. It has always been failry spritzy when I have had it.

my old man who doesn't like beer. he has tried rare vos in the past and thought he could drink it (which for him says a lot since he doesn't like beer). He tried my 3 week old rare vos carbed in a 2L today and said basically the same thing.

cracked the first bottle a few days early. carbonation isn't quite up to where I would expect it to be yet but even if it stayed at this level that would be fine. I've got a bit of chill haze but otherwise the beer looks very nice. At some point I'll crack open a bottle of rare vos with my clone and see how close I got on color and taste. overall I'm happy with the taste. I might say I'd back off the coriander slightly but maybe it's just the yeast I'm tasting. it's slightly spicy and has a very, very faint alcoholic burn but nothing that shouldn't fade with a little more aging at cellar temps. I'll have to post again when I do a side by side. :lol:

Nice! Good to hear it came out well. I'm sure that with time the spices will mellow, the beer will carb and the haze may clear. Sounds like you made a winner. Let us know how the side by side goes.
