I'm sure I'll get a little sample when I bottle it so I can give a preview slightly earlierSounds great! I'll be interested to know how it tastes once it's ready.

I would say 3 vols of CO2. It has always been failry spritzy when I have had it.next up is deciding how many volumes of CO2 to shoot for. What says the board? As I remember it rare vos is fairly carbonated like most belgians tend to be.

even just a few days later it's better than the first bottle I had. I can't wait to make a belgian IPA with this yeast. I think it will be very nice.Nice! Good to hear it came out well. I'm sure that with time the spices will mellow, the beer will carb and the haze may clear. Sounds like you made a winner. Let us know how the side by side goes.
