I hope so!  there was a questionable part of the process that kind of freaked me out.

 

even though I rinse all of my mash tun bits immediately after and before use I noticed that when I went to pull a sample from the drain for pH testing that it smelled a little like barf like something had ####ing died in the drain assembly.  so I tossed about half a pint and drained some more and smelled it and it smelled fine so I ran with it.  I even tasted the pH sample after measuring pH and it didn't taste bad or anything.

 

after the mash was done I partially took apart the drain but I couldn't see anything in there.  I'm guessing a chunk of grain got left in there since my last brew a few weeks back.

 

after this brew I partially filled my tun with hot water + oxiclean so all of the important stuff is getting a good soak.  I may make this part of my process going forward.

phew - a day after dry hopping it looks to be done.  finished at 1.004 from 1.042.  you'll be able to taste the hops for sure!

 

I'm letting it hang out in the low 60s to let the hops work a little before I crash cool it probably some time tomorrow.

so I'm not sure when I should start chilling.  I normally only dry hop cold and for a long time so this is new territory in a way.

I would go 48 hours at 60 with the hops then start dropping.

so this beer is fantastic although I have to admit not particularly lager like.  I guess it is a little but I could probably be fooled into thinking this was a clean ale yeast.  part of that may be that I've made some many drez chinook/citra pale ales with pilsner malt.  no complaints overall though.

I will have a cake of 34/70 soon and this has me thinking. I may bump it up to 6% range.
