Just put my long-awaited saison to bed.  Brewday got bumped from Monday to today.

 

Wife's work Christmas party was last night; the restaurant we went to had a nice DIPA on tap that I can't remember the name of, but was damned tasty, and i might have brewed today with a slight hangover. :D :rolleyes:

 

Fortunately no mishaps occurred, and brewday went off without a hitch.

Only if you don't partake while brewing.  That's a federal crime, I think.

Planning out a Scottish-ish 80/~ ale for sometime midweek next week.

 

Some 2-row, Maris Otter, C-40, and a bit of Carafa-3 to ~1.060 and ~12 SRM for 5.5 gal in the primary.

 

Magnum to bitter and 2 small late additions of East Kent Goldings for ~30 IBUs total.

 

US-05 will handle the heavy lifiting in the primary, which will run on the cool side (~60°) then a nice long nap in the lager fridge.

MLPA is in the fermenter and sitting in a 62° fridge with 1056.  Brewday was smooth.  The recipe had some minor tweaks but everything looks like it will be great.  8 lbs of Golden Promise, 1.75 lbs of wheat, 5 ounces of Simpson's Extra Dark Crystal.  Mt. Hood to bitter and then an ounce of Mt. Hood added to the whirlpool.  5%, SRM 9, IBUs of about 25.  Should be nice.  Cheers peeps.

It's pretty rare for me lately.  Finished up 10 gallons at a little after 10 AM today.  Although about a month ago I thought fermented bloody mix with some wheat beer would be good - another early morning session.  It was, repeatedly.  I had a nap that day.  Other than that it's been years.

This 1056 was straight from the swollen pack (dated 10/31/19) and with a bit of pure O2 at pitching yesterday it's up & running strong this morning & the vent-off smells lovely.

Dark Lager is in the keg and Lallemand Diamond is waiting in the fridge for Friday afternoon (I think...) when I am going to make a pilsner.  The base malt is 50/50 Golden Promise and Barke Pils and then a bit of Carahell.  Hallertau as a FWH, bittering addition and a whirlpool addition.  My son (Sudsy McBeerington) is home and getting reacquainted with the idea of draft beer that comes out of the wall.  He has kicked one keg already (not by himself but he helped) and I know that one more is going down soon.

Final brewday of 2019 is tentatively scheduled for tomorrow.  If not tomorrow, then maybe the 1st week of January, but I'd rather not wait that long.

 

Looking to brew an IPA with some Mosaic, Amarillo, and Columbus that have languished in the hop freezer for far too long.

 

Grist will be my usual IPA grist (10lb 2-row/pils, 2lb Munich, 0.5lb medium (40°) crystal, and 0.5lb wheat).

 

Columbus to bitter, then 4 large late additions: 15 (Amarillo), 10 (Mosaic), 5 (Amarillo), and 0 (Mosaic) minutes. 

 

US-05 will handle the heavy lifting in the primary.  Shooting for ~1.070 and 100+ IBUs for 5.5 gal in the primary.

Going to try to squeeze in a final brew before winter sets in. I've not had a hoppy beer on tap in months so I'm making this:

 

10# MaltEurop pale

1# Vienna

1# GNO

A touch of CTZ to bitter and a blend of  CTZ, Azacca, Mosaic and Mandarina at 10, FO, WP and DDH. Maybe 5-6 ounces in total. Most of these hops are from prior year harvest so I want to use them up.

1272 to ferment.

Nice.  I'm doing something similar tomorrow.  Golden Promise, wheat and caravienne and then Apollo to bitter with a bunch of leftover hops at flameout:  Azacca, El Dorado, Lemon Drop, Cascade, Amarillo.  1056.  Enjoy your brewday.

Just racked off 5 gallons of Porter from my Barrel that is going funky (its picked up a really nice Barnyard Brett note), have 10 gallons of a Belgium Grisette fermenting away. So, no brewing this weekend. thinking of doing a NEIPA next weekend.

I brewed this pale ale today.  My one ounce of Amarillo looked and smelled out of date so I tossed it so the late hops were one ounce each of Azacca, El Dorado, Lemon Drop and then two ounces of Cascade.  I waited until the wort was chilled to 170° and dropped all of that in.  Intoxicating aroma.  The whole garage smelled amazing.  Apollo was the bittering hop.  The wort was a nice pale amber color and clear as could be.  1056 on the 2nd run.  This should be a nice beer.

Looks like my 2019 brewing ended a few months back.  Never got that batch on Sunday but have it planned for new years day.  Not a great brewing year, 6 maybe 7 batches and a few were duds.  The one I liked the best was a no boil extract NEIPA.  Hoping to get back on track in 2020 with at least one batch a month.  Fingers crossed.

Have all my grain and water measured and 3711 on the stir plate for a new year Saison.  Either tomorrow or the 2nd.
