what's funny is I can't even remember what pliny tastes like it's been so long.  I just know everyone seems to really like it and t his recipe looks solid so I figured why the hell not?!

Had one last week .. it was excellent and made me want to drop all my brewing plans and brew it up.

gravity was at 1.019 last night and it's still def fermenting (krausen and airlock activity is still going on) so that is a relief.  I'm really surprised how great the hydrometer sample tasted - typically at this point I often find the yeast still has some cleaning up to do but that does not really appear to be the case right now.

 

I also threw in the hops for the first round of dry hopping after pulling the sample.  this beer seems very promising as of now.

So I never updated this - this is a great beer.  I'm not sure how close it is to pliny but I really enjoy it all the same.  I really like how it dried out fully to about 1.009 if I remember correctly.  It's very well balanced and there is pretty much zero alcohol burn.

typically my wife does not like IPAs or DIPAs but she tried some of this and was surprised she liked it.  I think she is not a fan of Chinook but is more comfortable with what I would call more traditional C-hops (cent, Columbus) which play a big role in this beer.

after some time in the keg this beer just keeps getting better and smoother.  it's nice and clear now and any hop harshness has faded into delicious hoppy taste and aroma.  really coats the inside of your mouth with resins.  love it!

I have been giving away a lot of beer lately and my supply is running low. On top of that my keg of Triskel dry-hopped Saison kicked last night. Wish I had a hop monster like yours to tide me over!

I have been giving away a lot of beer lately and my supply is running low. On top of that my keg of Triskel dry-hopped Saison kicked last night. Wish I had a hop monster like yours to tide me over!

 

it's an easy beer to make as long as you don't mind opening up the ole wallet for all of the hops.  overall I think this beer cost me about $50 for 10 gallons, $60 tops.

The reason I haven't made more beers of that gravity is because I don't often have the throats to pour it down whilst still fresh. That seems to be changing though as more people have been willing to try my brew lately and are realizing not all home-brew is the rot-gut swill they have had from other home brewers in the past. I even had my first request to "make us that pale ale with Mosaic again".

Yup, that is a great beer. My latest IPA went on February 4th and it is not long for this world. I need to get going and brew it again.

Sounds like a great beer! May have to try it sometime. Simcoe is a hop I haven't used yet for some reason but I have some now.

Never would have guessed that! Make Surly's Furious… its mostly Simcoe with some Amarillo and Ahtanum thrown in.
