OG was 1.053 FG was 1.010 so about 5.6% and right in the sweet spot I like. I like mosaic hops so I find the beer awesome. Pungent nose and good flavor.

Did you do anything like a high mash temp to help with body or did it come out pretty light which is what you were going for?
154 was my temp. The body is nice right now. Not one of those thick NEIPA style but not dry westcoast... just right in the middle for me.

West Coast IPA. but double dry hopped like a NEIPA. base malt was a 50/50 split of two row and marris otter, a pinch of C-60 for color, and a pound of sugar to help dry it out.
about 3/4 of a pound of hops in a 5 gallon batch. It's a super dry beer at 8.5%, but a lot of fruity notes coming from the hops. used BRY-97 for yeast, which, being the 3rd or 4th time using it, not totally in love with it. rather use WLP001/1056.

- CTZ at 90 and 30 min's
- Simcoe at 15 min
- Citra, Simcoe, CTZ at 5 min
- Hopstand: Citra, Simcoe, CTZ
- Day 4 dry hop: Citra, Simcoe, CTZ
- Day 7 Dry hop: Apollo, Citra, Simcoe.

Like the hop bill on that, something I can see drinking a lot of. I agree with you on BRY-97. I used it before and had no desire to go back to it.
With just 2-row I'm surprised it's not really dry at that og. Can't argue with results though
Could also partly be from the water? Of course I do not have the recipe here to see what the hell I did with it ...lol

It holds up well for higher ABV hoppy beers. I once made a hoppy session ale with it; the finish of the beer had, for lack of a better term, bitter taste- think of chewing on a aspirin. not as noticeable with a bigger beer like this. but yeah, concluded that i'm not a fan of the yeast stain.

Czech Pilsner. 75/20/5 Pilsner/Munich 2/Carahell. 5 ounces of Saaz used as a FWH and at 30. 2782 Staro on the yeast.
