Absolutely no ban on dreams. I have a feeling that 99% of us would LOVE to be brewing. I know I dream of it. I was in Wisconsin a few weeks ago driving through farmland and wondering how much land I would need to be self sufficient at growing barley! A pipe dream for me for sure, but hey... it sure beat thinking about working in an office building in Northern California. But if I were you, I'd be following up with that Lotto winner... I had a guy once tell me that JOB stood for "Just Over Broke". Do you just want a job? Or do you want to do something you love. Most of us are in jobs, wishing for more. I sincerely hope you can find a way.Hey a man can dream can't he? You never know, business opportunities start like this all the time, my luck has got to pay off sooner or later. I do believe in the definition of luck as- the moment preparation meets opprtunity. My business plan is 1/2 written and my concepts are easy to convey. Dosnt mean I am going to sit around and wait for every lottery winner to pitch my ideas to, however I will definitely follow up on this one!

Well, I was out with my friend at basically a college bar, he's nothing but BMC, 50 cent drafts is why they like to go here and 50 cents drafts is probably why they taste bad. One was so solventy I couldn't drink it, and my friend is the one who got it swapped out for me, so I asked for a Sam next. I can't remember the off flavor in that one, but it was a more common spoiler. Cheap places like that, I just go for bottles now. The beer might be fresh in the keg, but it's passing through some nasty stuff on the way to my glass, so I'll take the pastuerized bottle please.another friend said it wasn't over carbonated

I would like to think that I'd be oblivious and just "happy go lucky" thrilled to be there all the time.+1 Like a lot of us I sometimes dream about brewing for a living. I'd be making a lot less money but I would be doing something fun. My only fear is that if I had to do it, would it still be fun?

I think my roommate tried to explain how my first batch undercarbed and his phrase didn't come out right. I had a stout at the judging last weekend that tasted like a pale ale but I'd think it would be harder to pull off going the other direction.I had someone say that a pale ale tasted like guinness... if your only frame of references are BMC and the Guinness that you drank last St Patrick's day, then that is probably the best they can do.

Since Drew is still working at the small brewpub I think it's still a bit of fun. All he has to do is go upstairs and can get immediate feedback from the customers. Not quite the same though when he's working at Schlafly.BTW, on of the mainstays at Mattingly, the small brewpub, is a cream ale. Actually pretty tasty, and there's not much room to hide any defects. He's in a good situation. +1As a former Master strength Chess player the use of gambit was funny to me.Take it easy, I'm just clowning on you guys. I thought the use of the word pallet was pretty funny and then when stellar used "gambit" it was too good to pass up.

I think I'm gonna reject it and go with "Two Barbarians NFP Cream Ale No. 2". I had to dump a wheat beer last night that I ruined by using plums in the secondary. I even used metabisulfate per instructions to get rid of the wild crap... well, let's just say it wasn't even suitable to make vinegar out of. It's the first batch that I'd ever had to dump. So now that I'm 5 gallons behind and was needing to do another 5 anyways, I'm thinking of doing 10 gallons of my Cream Ale. I'll be honest I think some of the best beers are simple in ingredients. My last brew was Pils malt and magnum hops with WL german lager yeast and thats it. There is not a simple list than that. I expect it to over well with anyone who drinks lager on a regular basis, (maybe a bit more bitter at 33 IBUS) . But, I didnot brew it for anyone in peticular, I brewed it to see how simple I can get and still make an excellent beer.I know it's not for everyone. We all have our likes and dislikes, but for some reason in the homebrewing community it's the red headed step child. Is it because there is a perception that it's just a notch above BMC? Or is it too simple? You just don't see (m)any threads about guys getting all excited for a good Cream Ale.
