I could be wrong so you'd want to confirm that (if possible). I was under the impression that they used a house yeast for most of their beers.if it's the same yeast then absolutely, but I did not know that so thanks for the info

They do but the prevailing opinion is that they also use it for bottle conditioning. I haven't seen anywhere that this was proven to be true 100% but folks have cultured that yeast and brewed with it and liked the results.I could be wrong so you'd want to confirm that (if possible). I confirmed with the brewer a while back that the yeast in rare vos is the yeast that was used to ferment it. now whether or not rare vos yeast is the same as hennepin yeast I'm not sure. They do but the prevailing opinion is that they also use it for bottle conditioning. I'm really thinking about getting back on making something like this.
I'm not as bent on using the exact yeast though. The idea of harvesting isn't something I really have the time for these days so buying a smack pack sounds pretty good.
I'm also not very keen on using dried ginger. why not use fresh? it has a lot more ginger bite to it.

If Hennepin really uses the same yeast as Rare Vos then why not just use WY1388/WLP570? CYBI used it to clone Rare Vos a while back and not surprisingly it is Duvel's yeast and, what do you know?... Duvel owns Ommegang. If you don't want to culture I would go that direction.
ETA: Both those beers are favorites of mine. Had a Rare Vos last night.

what's odd is that the wyeast description talks about complex esthers. i'm not sure if that means they are prevalent or not but I find rare vos to be fairly clean as belgian beers go. maybe I'm wrong.

but Ommegang was brewing these before Duvel purchased them so it's entirely possible it's a different yeast

Maybe I'm influenced by the CYBI cloning but I taste some similarities between Rare Vos and Duvel. I don't get the same with Hennepin but that could easily be hidden by spicing and fermentation schedule/ temperature.

Tried repeatedly, but have not succeeded culturing Hennepin yeast (yet). Maybe not fresh enough.
