the airlock assembly has a restrictor on the bottom that can clog, and should be busted out

Not all of them do. The one I have does not have the restrictor on it. That being said, I'd have been willing to cut it off. LHBS just happened to have one without it though.

It works just fine. Granted, my beer casualties are limited in scope since I have a chest freezer with digital temp control for my fermentation chamber. If something DOES go wrong, it's not hard to clean up.

Exactly. Which is why I no longer use them.
