Even though most of us are not brewing this one for a few weeks, I'm starting this thread so that the early birds (I'm looking at you armagh) will have a place to share their experience with this brew. I have everything I need except the yeast. I could use some US-05 but I need to order a few things for some other beers so I'll add the yeast to that order. LHBS doesn't stock it. My problem is working it into my rotation. I'm a few weeks away at best. I'm targeting Big Brew weekend.

Question: I have only used rye in small amounts in saisons, never as this large a potential of the grain bill. Will I need rice hulls?

I have never needed rice hulls when only using a couple of pounds of rye. You might want to tighten up your mill though.

when in doubt about rice hulls, if you have them, use them

Maybe I missed it, but was there any discussion around the C120? Seems like an awful lot. Between that and the pale chocolate I'd get a nearly porter colored beer out of my system. I tend to run ~3-5 SRM higher than the ProMash prediction.

I haven't entered the recipe but I expect this thing to be pretty damn dark as well.

I'll knock the C120 and PC down a bit and fill in with CPils. I was just wondering what led to the 8% grist content on the C120.

Not a clue. One thing might be that a lot of his recipes are written for a very low efficiency (~60%). Usually I only adjust base malt when adjusting for efficiency and I leave the specialty grains as is. So that may lead to too much specialty grain in the final recipe.

we used C120 in the inaugural BrewsBrows DoucheNazAle it is nice in a hoppy red, but I think it was only 4 oz

does efficiency affect the contribution in terms of color and flavor from specialty grains?
