Winging it! Lol Just one of those things I was aware that had an impact on the beer, but didn't spend the time/money on and I was happy with the product already.
sometimes you get lucky and your water is good enough for the styles you like. my water is moderately soft so most styles require that I acidify the mash a little bit. the only exceptions are dark beers on the higher ABV side of things.

I brewed a Belgian Dark Strong yesterday, so there is that.
About a month ago, I came out of retirement and brewed JKor's smoked robust porter. Such a good beer.

My son picked up an assortment of POINT beer up in Wisconsin. Among the assortment was a classic American Pale Ale which you don't see much anymore. I happen to have Wyeast 2124 Bohemian running right now but I figured I could whip up a recipe that looked like an APA (with Cascade hops) and brew it as a lager. It would scratch the itch and most people wouldn't realize it was a lager. That's coming up one day this week. It would be on tap right when we start having some crisp, fall days.
