Wait for a heat wave and ferment in your garage. That's what I do. Though I have done in cooler months while fermenting in a closet with a little electric heater and brew belt!

 

the way I'm setup right now I kind of have to ferment in the basement but it's easy enough to put a space heater in the ferm chamber.  feels wrong but it wouldn't be working too hard.

so next beer I brew will be with this yeast.

 

20 lb pilsen

3 lb white wheat

1 lb caravienne

 

mash @ 151F

 

1oz nugget @ 30

2oz sweet orange peel @ 15

1oz ground coriander @ 15

2oz amarillo @ 0

1oz citra @ 0

4oz amarillo @ hop stand

1oz citra @ hop stand

 

ferment on voss @ 99-100F

 

not sure if that's too much on the spices but I want to make some orange flavor pop in this thing.

cleaned my 2 corny kegs and fermenter.  tomorrow I'll sanitize, measure the water, measure the grain.  4th of July I brew.

I may use Voss or Lutra for a brew tomorrow. Might as well let the heat be an ally. Looking to use Mackinac hops for the first time.

got the temp controller set to 98.6F (37C).  I had to put the heater in there because I accidentally chilled down to 95F.  this is not usually a problem I have :P

I thought it was fitting LOL!

 

a few things happened during this brew:

 

1) I didn't have as much sweet valencia orange peel as I thought so I used 1.5oz.

2) my dedicated beer spice(coffee) grinder is broken so much of my coriander just went in as whole seeds.  I don't think it will matter too, too much.

3) I upped the amount of amarillo b/c I only had an oz left so I increased the hop stand amount to 5oz.

4) I did a FWH for the nugget

5) the boil was low and of some unknown amount of time beyond 30 minutes because I was simultaneously smoking some chicken and the chicken needed my attention.

6) I just noticed my space heater tripped it's internal circuit breaker so I plugged in my backup but I have a feeling until I get this up to 37F I'll have to keep an eye on this.

Likely this happened but hard to know for sure since I was heating my chamber.

I did pretty soon after I made that post.  I probably didn't get quite as much natural carbonation in there as I normally would but any CO2 saved is still good.  I just unplugged space heater.  I think I'm going to crack the lid to let it cool down a little bit (basement is cool) before I crash it down really hard.

Hard to tell what this is going to be like at this point but I'm thinking pretty clean. Even at 80+ f and with a lot of yeast in suspension it tasted fairly clean. I'm running a small fan to let the fermenter cool down to something closer to my basement temp to conserve some electricity.

so this beer is good but I'm not sure I'm super crazy about this yeast.  not that it's bad but it's kind of a weird place between being clean but also just slightly "belgiany".  I'm not sure what to make of it.

I like Voss but there's other Kveik yeasts I like more. Hornindal is great in IPA's, Lutra (dry or liquid) is very clean.
