no picking something really vague like "porter."  you have say something more specific like robust porter.

 

it's boring but I think I'd go with bohemian pilsner.  one with a solid dose of saaz.  there is pretty much no time where I would turn one of these down.

I don't know that I've noticed you making one of those lately.  maybe I missed it.  I've mostly seen you making various big beers with the weird yeasts ;)  (totally approve btw)

Oh he has!

I remember asking this same question a few years ago and back then I said saison because you could change it up so much. A few years later and looking at the beers I drink I would be stuck between a Pilsner and hoppy pale ale. My gut tells me to lean lager and a German Pilsner with some fresh noble hops would be my choice.

Anchor steam was a go to for me many years ago. I need to grab some and taste that northern brewer again.

I thought you were one of the folks around here that was sensitive to hops. Am I misremembering?

you and stain both had similar hop issues that went away IIRC

if I had to it'd be an american stout made with good pils malt a clean lager yeast and dry hopped with an american noble hop just enough...
