I'm referring to the Lallemand dry yeast product.
I was thinking of make a batch of porter with it and saving some yeast cake. Has anyone made a dark/roasty beer with this yeast?
I've done the yeast cake thing in the past. I haven't generally had issues going from dark to light since I only save a 1 qt mason jar. I usually just avoid first round being something really hoppy so there isn't as much non-yeast material in there.
also, any experiences I might want to know about? maybe optimum temperature?
