Anyone used New England American Ale Yeast yet?

I'm referring to the Lallemand dry yeast product.

 

I was thinking of make a batch of porter with it and saving some yeast cake.  Has anyone made a dark/roasty beer with this yeast?

 

I've done the yeast cake thing in the past.  I haven't generally had issues going from dark to light since I only save a 1 qt mason jar.  I usually just avoid first round being something really hoppy so there isn't as much non-yeast material in there.

 

also, any experiences I might want to know about?  maybe optimum temperature?

As you know that is Conan and the Alchemist uses that yeast in many dark beers so I think you should be fine.  Personally, I would stick below 65.

As you know that is Conan and the Alchemist uses that yeast in many dark beers so I think you should be fine. Personally, I would stick below 65.


I wasn't sure if they used the same stuff in all of thier beers but makes sense.

Is the temperature recommendation a hunch or based on something you heard?

They use it is most.  I think I saw it in a book I have where he had a section in.

Excellent. I think thier dark beers are quite good so I think following thier guidance is a good move.

so is this yeast the same one that was always "east coast ale" yeast?  I never remember new england being part of the name long ago....

pitched the yeast packets into some chocolate porter.  I set my chamber to 18C (64.4F).

 

OG was 1.059.  hopefully okay to save yeast from this batch for the next one.  I usually start with a lower OG than that if I'm planning to reuse :-/

kicked it down to 17.8C so it's actually 64F which is what I was really shooting for :P

no activity yet but it hasn't even been 24 hours so not too surprising.  temp has dropped to 63F because I don't have the space heater in there.  I think I'll just leave it for now and once it gets going it will warm itself up no problem.

ugh..  we are at about... let's see...

 

24 + 24 - 6 = 42 hours and not a sign of activity yet.  I even cracked the fermentor open and peeked inside and no layer of foam or anything in there yet.  I was hoping I just had a leak somewhere.  there might have been a few small clusters of bubbles but that's it.

 

pretty soon I'll be throwing in some uS-09 (US-05 + S-04) in there.

 

the packets had a best by date of sometime in 2022.  not sure if this is bad luck or what.

really?  an ale yeast that doesn't produce a bunch of Krasen or blowoff CO2?  it's tough for me to track just by watching the bubbles in the starsan blowoff b/c if the heater was recently on I think it causes an increase in pressure that causes a little bit of outgassing.

I took another peek and it's either going to start or it's going to be infected.  either way some things look like they are happening.  48+ hours  :crazy:

Fingers crossed it starts. I had similar an my last 1318 batch... I dumped it.

It's going at a reasonable clip this morning. Rerouted the path through my serving kegs to start the purging process.

def fermenting pretty strongly now.  I really hope this turns out okay b/c my intention was to save a couple of mason jars of the yeast cake and make a couple more beers with this.

yeah - this is cranking along pretty good.  I kind of wonder if one of the packets was not very viable for some reason because it's not like they were old or anything.  also they were shipped to me in the cooler months so I don't think they were exposed to high temperatures or anything.

 

both packets were very "tight" like vacuum sealed so I usually take that to mean things are okay.

the chest freezer is having to run sometimes now so that's a good sign.
