Anyone used New England American Ale Yeast yet?

so would you keep this below 65F until the end or would you let it warm up to upper 60s at some point during the fermentation?

I say 72 hours and then it creep on up.

I just recently reused Gulo yeast. Slurry that was in the fridge for 10 weeks or so. It was hardy the first time around, so I just pitched it. No activity for the first 24 hours - whoa, I was expecting a rocket like the first time. Later that next night, I saw some bubbles, not much but it started. Now? It's exploded! Gravity is dropping like a stone. OG was 1.070 and now 1.030 (an hour ago).

def slowing down this morning so the spunding valve is on and the space heater is warming things up a touch.

 

I don't know if the blowoff tube is any indicator but this seems like it might be pretty fruity.  I noticed the aroma when I was rinsing it off/out.

gravity is kind of high right now at 1.016 compared to last time I made this with BRY-97 (1.01).  maybe it will keep going???

Maybe it'll drop a point or 2 if you let it ride. My fg lately have been sub 1.010. Highest 1.008.

Eta :not surprising for Conan since it can be a pita.

Maybe it'll drop a point or 2 if you let it ride. My fg lately have been sub 1.010. Highest 1.008.


Are those from the Tilt? Does it account for the carbonation assuming that they were pressure fermentation.

Are those from the Tilt? Does it account for the carbonation assuming that they were pressure fermentation.


I usually take a sample anyway at the end just to compare to the Tilt.

Got it. I never used the Tilt under carbonation so I was not sure how it handled it.

went down to maybe 1.015 after another day and a half so I'm calling it done.  is this yeast regularly a low attenuator?  I'll have to keep that in mind if I make another beer with the fresh cake next week.

I guess an attenuation of 74.5% isn't that low.  so what would be a good hoppy beer to make with this yeast?  I'm inclined to make something with a base of GP and minimal "other stuff".

I don't have mo but I do have gp. Probably if I added a touch of carapils copper that might push it in the direction of an all mo beer in terms of body.

I think I have cascade but no cent.

Actually, carbonation doesn't effect Tilt readings as much as I thought. At least so far from what I'm seeing.

No that is pretty good. I’d ferment higher than 65 tho. Prob 70 or so. Fast and fruity
