so second use of this yeast (from a yeast cake) started much faster. pitched it in yesterday around 1:00 and first thing this morning it was fermenting hard. I just hooked up the jumpers to purge my serving kegs and went and checked on it again to make sure there were no major leaks and the starsan has a foam hat on it that is at least a foot high. normally that doesn't happen.
Anyone used New England American Ale Yeast yet?

letting the temperature rise a little bit more this time, up around 67-68F now.

so this time it got down to about 1.012. attenuation of about 75% again. well at least it's consistent

this is some yeast I had saved and made a starter with. I've never seen a starsan blow off snake like this before. 2' high!
