This tastes really good already. Not even 2 weeks since it was brewed. Kind of a nice, mellow coffee taste with no alcohol burn.
That's what happened to me as well. Not sure why.

1. Light APA/IPA (4-4.5%)
2. English mild
3. Baltic porter - I have a holiday ale (spiced ESA ~8%) that I usually brew about now but we're not having company this year so good to try something different.

24 lbs 2-row
4 lbs munich (regular/light)
0.5 lbs C80
1.5 lbs roasted barley
1.5 lbs chocolate malt
2 lbs flaked oats
2.5 lbs dark brown sugar (added at 10mins left in the boil)
mash at 152-153F
2.2 oz of magnum @ 60
2.8 oz EKG @ 10
fermening on the diamond lager yeast
right now I'm chilling....
oh yeah specs:
SRM: 49
OG: 1.084
IBU: 60
FYI - this is what I actually made but part of that was just what I had available ingredient wise. no complaints on how it turned out though.

I'm going to hopefully have a run of 34/70 beers soon.
I'm thinking bopils -> save yeast and split:
half into vienna lager
half into starter later for baltic porter

I already ran 2-3 lb through the new one and then used the compressor to blow off any dust that stuck. hopefully that gets rid of the oils and things.

I might do the BP again this weekend. I used Lutra (liquid) last time, I might either try it with dry Lutra or 34/70. If 34/70, it will be under pressure.
I used the dry Lutra. It behaved exactly like the liquid during fermentation. I kegged it a couple of weeks ago and naturally carbed. I killed 2 kegs today, so the BP goes to the tap tomorrow.

So, I didn't plan on drinking tonight but I figured I'd have a sample glass of my new Tripel. Tastes great but a bit under carbonated. Anyway, I ended up having a few more. At one point, I said, damn, I have that Baltic Porter. Went to the tap, nothing. Ah, I thought I put in the fridge. Still standing in the hallway! Damn! I guess I'll try it tomorrow.
I'm hoping to make this again in a couple of weeks. I'll either reuse slurry from the 2nd gen vienna lager I'm making today or make a starter with another mason jar I saved from the bopils I made a few weeks ago.
