once again Drez was right.  this beer was the right choice.  holy hell it's good!

8.9% ABV and zero alcohol burn.  zero.  unbelievable.  also no cloying sweetness.

I do not think Baltic Porters get the respect they are due.  I will take that over its sister beer the RIS any day.  I may have to pull the trigger on this myself and give it a go soon and let it condition till fall... If I can wait that long.

the diamond lager yeast is a good choice although I would probably be a little scared to try and do it with dry packets to start given how many you'd have to pitch and the lag that seems to go with the first go around with this yeast.  a smaller beer first to build up the yeast seems like a reasonable way to go.

Agree.  I have Bayern up and going at the moment so I would most likely just use that.  I am sure it would be good.

yeah - I'm guessing most german type lager yeasts would be good.

I haven't used the Lutra yet. I'm going to try a light, hoppy beer first. Probably Saturday.

What got me was that it does not taste strong. Like drinking chocolate milk.

Huh! Wonder if this will be drinkable in 2 weeks. Kveik is a game changer. We shall see.

I was shocked how drinkable this was so early. High abv, lager yeast, still great early on.

Came up a bit short on OG - only hit 1.083. I only used a pound of sugar but that is negligible really. I used some Lutra yeast slurry from a batch I kegged yesterday.

Actually, my OG was 1.090. Better than I thought.

Vigorous fermentation going on after just a few hours of pitching.

This looks about finished less than 48 hours after pitching Lutra slurry. On the dry side, 1.014. Looks to be about 10% abv. We shall see how it actually tastes in 11 days or so. The gravity sample tastes fine.
