Help me pick a dry lager yeast

not much I'd say it's just bigger, using a similar concept

 

well possibly worth a shot.  should I still use 2 packets of yeast?  I could pretty easily divert 2-3 gallons of wort into a better bottle.  the question is how long would it be before I could pitch it into the rest of the wort?  I'd be a little nervous about leaving the remainder of the wort with no yeast for a long time.

so to summarize my options are:

 

1.  pitch all 4 packets (ouch in the wallet!)

2.  pitch 2 packets (maybe risky?)

3.  make a starter with 1-2 packets (boooo on making starters if I don't have to)

4.  collect a few gallons of wort in BB, pitch 2 packets of yeast and then pitch it in the next day??

 

I think I'm going to try doing just 2 packets with no rehydrating or anything.  kind of a risk I know but I have seen quite a few people have success with that rate of pitching.

Can you use the drauflauesen (sp) technique with dry? Pull off a gallon, get the dry yeast going in that and add it all back to the main batch. Just spitballin.

 

You can, but it's a waste of time since there's no benefit, and you may get reduced performance from the yeast.


I had a similar thought but I'm not sure if it helps or not.

 

It does not help and may hurt.

back to this general idea:

 

how is this particularly different than making a 007 type starter other than not having to make the starter and introducing some additional lag?

 

DO NOT make a starter with dry yeast...it's just that simple.  For one thing, there's enough cell count that it's not needed.  For another, when dry yeast is produced., it's stopped during sterol production.  The yeast is ready to go and you don't want it using up those sterols before it gets into the wort.

yeah - their calculator says I need all 4 packets (ouch!).

 

I do like how they have a different calculator for every yeast strain.

about to mash in for this beer so I guess I've at least narrowed the options down to some number for yeast packets.  2, 3, or 4.

Here is where I am.  Do 3 and start it at about 52.  Once it gets going drop to 50ish.  Nothing to back that up other than my gut.

that calculator doesn't seem to factor in gravity.  I can lower my gravity all the way down to nearly water and it still says 4 packets :P

I have never used more than 2 packs of Diamond lager up to a 1.065 OG. Sometimes only one, even for that gravity.  I have no complaints.

10.7-10.8 gallons of 1.041 gravity wort.  :P

oops...forgot that.  I do 5.5 most of the time.


eta:  this is maybe pushing me to use 2 packets since the gravity is pretty low.

 

I think that would be fine.

I can see that.  I had a higher OG in my mind when I said 3.

I pitched two packets in at 53F yesterday at around 4:00pm.  still no obvious activity but it's pretty early yet.
