Just threw this together.  Thoughts?

 

10 gal batch

OG: 1.055

SRM: 16

IBU: 61

 

9lbs of US 2-row pale

9lbs of TFMO

2lbs carared

1lbs crystal 80

4oz midnight wheat

 

mash @ 152

 

finished water profile:

Ca: 70ppm

Mg: 3ppm

Sodium: 29ppm

Sulfate: 132ppm

Chloride: 52ppm

Bicarb: 27ppm

 

2.5oz Magnum @ 60

1oz Mt Hood @ 5

2oz Mt Hood @ 0

3oz Mt Hood @ 160F hop stand during chilling

 

Ferment with mix of US-05 and S-04

 

Dry hop with 6oz of columbus in primary towards end of fermentation.

 

BEER!

1 - why a 60 minute boil?

2 - add in some CTZ to the WP to bolster that DH.

I've been having to boil off a little bit more lately so I figured I may as well throw some hops in while I do it.  still dialing some things in.

I was back and forth on the whirlpool columbus actually.  I guess you nudged me back! ;)


added 3oz of columbus to WP.

 

is 65 IBU too high?  Trying to achieve some balance here since it has 3lbs of crystal type malt.

I would showcase the carared, or showcase the C80, but not both. They both have a distinct character of their own. Maybe just me.

I wasn't sure exactly what carared would be like on it's own so I was being a little conservative with it. Have you made something where it was mostly carared and base malt?

the other issue I had is that carared is on 20L so it's going to take A LOT of it to make a beer get into that red zone of color.  that's why I supplemented with C80 and some midnight wheat.

 

eta:  I guess I could increase the midnight wheat as needed but then I'm not sure if I'll get into roasty territory which isn't really what I'm looking for here.

 

eta:  okay fine I'll try messing with it! :P

If I used 3lbs of carared and no C80 I have to increase my midnight wheat from 4oz to 6oz.  this is assuming I want to hit an SRM around 16.  I'm not entirely against this as it would give me a good idea what carared is all about :P

My $0.02 is that I do not think you will get any roast from 6oz of MW in an 11g batch.  I once used 1# in a 5g batch and it was fine.  I also do not have any issues with mixing crystal malts.  I think that is what gives you depth of flavor.

the nice thing is I have three 1lb packages of unmilled carared to use up :P

 

I think I'm going to go with 5oz of MW (puts me at SRM of 14.6).  I found a picture online of someone who used a good amount of carared and this is the beer with an SRM of 14:

yeah but I didn't want it to be too crystal heavy.  like denny's waldo lake amber is a little much for me.  that has 4lbs of carared and a pound of aromatic (probably can lend some sweetness like crystals do).

 

I don't want to make something like an actual irish red b/c I'm not looking to go that dry or that low in hops.

Could always take a look at Ken's HHR and amp it a bit with MW.  I made an Amber two beers ago and it's rather dark to offer suggestions.


Here's what I put together.  It's pretty darn drinkable but definitely north of red in color.  I'll post a picture later :)

6 lbs 8.0 oz      Pale Malt (2 Row) US (2.0 SRM)    Grain       1       53.6 %      
5 lbs             Mecca Grade Metolius Munich (11.0 Grain       2       41.2 %

Assume the carared is burning a hole in your pocket, this iteration looks like you'll hit your color.  Even .25 of the MW....

measured out the grain so this part is set.  thanks for the inputs guys!  I'll measure my hops whenever I brew this.

wort looked pretty dark but hopefully reddish instead of brownish :P

 

still boiling so I'll have to see what the hydro sample looks like.
