I think this will be v4.  I usually keep the hot side hops as chinook/citra and I'll be sticking with that this time.

 

it's usually the malt and yeast I switch around.  yeast this time will be one pack of s-04 and one pack of us-05.

 

normally I use lots of pils (per the original recipe) for the base but I'm kind of shying away this time because I have LOTS of US 2-row and only 20-25lbs of pils that I'd like to save for lagers or something like that.  I also have GP and MO I could use as base accents.  I do some a few pounds of vienna as well.  then I also have the regular specialty stuff like C15, C40, caravienne, carapils, etc.  thoughts?

Have any wheat?  the last batch I did was 50/50 two row and wheat and it was really good.

I have some. Probably not quite enough to get to half but that's probably okay. I could make up the difference with more 2-row or maybe some mo.

Two row - wheat - GP no crystal. Maybe some dextrine malt if you want.  I think the GP will give enough sweetness to the beer.

When you last did this what did you use for yeast?

for me it was not.  I did mash at 155/156

Not a bad idea. Might not do much for me or maybe it will help. Doesn't hurt to try.

looks like I have 8lbs of malted wheat.  that would probably get me to about 35-40% of my total grain bill.

10 gallon batch

 

10 lbs US 2-row

8 lbs white wheat

4 lbs golden promise

1 lbs carapils

 

mash @ 155F

 

2oz chinook @ 60

2oz chinook and 1oz citra @ flameout

3oz chinook and 1.5oz citra hop stand

 

ferment with US-05/S-04 mix starting at 68F (let rise later in fermentation to low 70s)

 

haven't nailed down water or dry hopping yet

I was going to dry hop in the two serving kegs so they could be different.

I'm not sure I have any Galaxy.... I have a decent number of options though. I just need to check my inventory out.

possible dry hopping options:

 

columbus, amarillo (4.25 oz), chinook, mosiac (2.8 oz), citra, simcoe, centennial, idaho gem (6 oz), strata (3 oz)

trying something new here.  primed the kegs with sugar solution, put dry hops in and racked beer on top to hopefully scrub O2 out of my dry hopping process.

 

keg 1: 1.5 oz chinook, 1 oz citra, 2.5 oz simcoe

keg 2: 2.5oz mosaic, 1oz amarillo, 1.5oz simcoe

so I've got the temp controller set to about 70F right now.  not sure what this will do with regards to dry hopping but hopefully it's plenty warm for conditioning purposes.
